My Everything Granola

A food blog wouldn’t be a food blog without at least one granola recipe, so here is my first (of many) offering to you all. This is my go-to recipe when I don’t have any fancy ingredients in the house and want to make a simple, nutritious and delicious breakfast cereal – but don’t limit this to just breakfast time! You’ll find me snacking on handfuls of this all day long and it makes the most delicious crumble topping over stewed fruits.

Everyone has their favourite granola, but sadly I’ve come to realise that most shop-bought brands are loaded with sugars and extra ingredients and preservatives that I don’t really want or feel are necessary in my breakfast bowl. Homemade granola is the answer!

Not only it is intensely satisfying to make, tastes better than the store-bought varieties, it fills your home with the most magical smell. As warming spices warm your kitchen you know you’re onto a winning breakfast. And you can change up the ingredients to suit whatever you have to hand. This is my staple base of ingredients, but feel free to swap out raisins for dried cranberries or some nuts instead of the seeds, for example.

As it stands this recipe is everything-friendly: it is gluten free (check your oats), nut free, refined sugar free, dairy free and hassle free!

My Everything Granola
Makes 1 large jar
Ingredients:
Dry:
150g oats
50g puffed rice
50g mixed seeds
50g unsweetened flaked coconut
1tsp cinnamon
Pinch salt
100g raisins
Wet:
1 ripe banana, mashed
2tbsp coconut oil
3tbsp coconut nectar or maple syrup
Method:

  1. Preheat the oven to 160Fan/180*C and like 2 baking trays with parchment.

  2. Mix all the dry ingredients together (except raisins).

  3. Melt the coconut nectar and coconut oil together and add the banana. Stir well.

  4. Add the wet to dry mix and combine thoroughly.

  5. Pour evenly onto baking trays and bake for 35mins, stirring every 15mins.

  6. Leave to cool then mix in the raisins and store in an airtight container for one week.
