Almond and Cinnamon Rice Porridge

A deliciously rich and creamy breakfast option when you fancy a change from porridge oats. This breakfast bowl is quick and easy to make with a subtle and comforting almond flavour and indulgent texture. A healthy, gluten-free and vegan breakfast for all the family.

Rice pudding has been on my to-make list for quite a while now. And it is still on the list, but this Almond and Cinnamon Rice Porridge is a brand-new creation for me and I am loving it. Not quite as heavy or heaty as rice pudding, this version is much quicker to whip up in the morning and serves as a healthy, refreshing and delicious breakfast option.

Similar to oats or buckwheat, simply warm up the grain with some milk until creamy and thick. The key element to this porridge bowl is to use cooked white (or brown) rice to begin with to decrease the cooking time. The result isn’t quite as creamy as slow-cooked rice pudding, naturally, but it is really a wonderful change to oatmeal.

Almond and cinnamon are classic breakfast flavours and the rice absorbs all of these comforting and warming spices. I use almond milk, almond butter and almond yoghurt for maximum almond flavour to create a mellow richness to the bowl. Stir the yoghurt in right at the end to keep the warmth but add to the texture.

I also love to top the Almond and Cinnamon Rice Porridge with warm smashed raspberries. Either warm them on the hob or in the microwave and lightly smash them for a fork for a welcoming tart flavour contrast to the creamy rice porridge. They also add such a gorgeous colour.

A sprinkling of chopped almonds for texture, a grating of chocolate for a little morning treat and that’s all there is to this bowl. Or, play around with the toppings to make each morning different. You can even cook up the base of this recipe in bulk and warm it through each morning with a splash more milk and yoghurt for multiple breakfast (or snack) bowls.

This Almond and Cinnamon Rice Porridge is smooth and creamy, comforting and really easy to make for breakfast. It is packed with fibre, protein, healthy fats and a variety of wholefoods and make such a lovely change to oats. They are naturally vegan, gluten-free and soya-free plus they take just 5 minutes to cook – a great way to use up leftover rice.

A deliciously rich and creamy breakfast option when you fancy a change from porridge oats. This breakfast bowl is quick and easy to make with a subtle and comforting almond flavour and indulgent texture. A healthy, gluten-free and vegan breakfast for all the family.

Ingredients

  • 100g white rice, cooked (about 300g cooked weight)
  • 300ml almond milk
  • 40g almond butter plus extra
  • 1 tbsp maple or fruit syrup
  • 1 tsp cinnamon
  • 4 tbsp almond yoghurt (or other plant-based yoghurt)
  • 80g raspberries
  • 20g almonds, chopped
  • 10g chocolate, grated

Directions


1. Cook the rice according to packet instructions or use leftover rice.
2. Add the cooked rice, almond milk, almond butter, syrup and cinnamon to a saucepan and bring to the boil, stirring to dissolve the almond butter. Lower the heat to a gentle simmer and continue to cook for 5-7 minutes until thick and creamy.
3. Stir through 2 tbsp almond yoghurt.
4. Warm the raspberries and smash lightly with a fork.
5. Pour the almond and cinnamon rice porridge into two bowls, top with the rest of the yoghurt, some smashed warm raspberries and extra almond butter. Serve with chopped almonds and grated chocolate and enjoy warm.

    Aww I so needed Breakfast inspo and vegan. I so can’t cook such a beginner and I am always in a rush in early morning to get to work in primary school. I tried my first Momma porridge pots and they are super. But I so want to make my own porridge bowls from scratch and your porridge looks delicious 😋. Love all of toppings you use.
