A Refreshing Coconut Berry Smoothie

This tastes like summer in a glass to me – light, refreshing and so juicy thanks to the abundance of berries. The coconut water makes the smoothie even fresher, while adding a bit more flavour and summery vibes. I love adding some baobab to morning smoothies as they add a real zing that really wakens me up. I think the subtle baobab flavour here really compliments the berries and banana, but feel free to leave it out if you don’t have any to hand. Although, I am so glad I invested in some, as baobab powder lasts a long time as you only need a little bit at a time.

A Refreshing Coconut Berry Smoothie

This smoothie isn’t too filling, but I do like to add some vegan protein powder, and I can imagine a berry flavoured one would taste great! I’ve used a plain pea protein just to keep my going a bit more, but I’d recommend this smoothie alongside a lighter breakfast like avocado toast or enjoying this burst of sunshine as a midday pick-me-up.

It’s simple, fresh and berry-licious!

A Refreshing Coconut Berry Smoothie
Serves 1:

Ingredients:
1 banana
150g frozen mixed berries
1 x 330ml carton coconut water
1 tbsp vegan protein powder e.g. pea
½ tsp cinnamon
½ tsp baobab powder

Method:

  1. Place all the ingredients in a blender and whizz until smooth. Pour into a tall glass and enjoy straight away – I like to top mine with some desiccated coconut, too.
