Sweet Potato and Tahini Mousse

This is one smoothie bowl that’s sure to make your tummy rumble, your eyes shine bright and your smile stretch to your ears. Health meets indulgence. What could be better?

After posting my Cacao Squash Smoothie Bowl, I knew I wanted to try the original and more common Sweet Potato Smoothie bowl. Yet, I didn’t want to totally conform to the norm so I’ve made mine into a Sweet Potato and Tahini Mousse.

We all love the creaminess and silky texture of tahini, so blended with caramel-like mashed sweet potato, we’re in for a delicious treat. It’s sweet enough for anyone with a sweet tooth but doesn’t feel like a sugary breakfast at all. In fact, I often have this is a dessert, too.

I’ve added to the nutritional goodness of this bowl by adding some happy-hormone maca powder and some spicy sweet cinnamon and just a dash of milk to really get this Mousse, well, moussey.  The texture is next to none and you’ll never guess it’s made from goodness that comes to us directly from mother nature.

Feel free to top your Sweet Potato and Tahini Mousse Bowl however you like. Here, I have chosen some nutty cacao clusters, cacao nut butter and some fresh raspberries. I would also like to top it with lots of Cacao and Maca Raw Nola for a super chocolatey treat.

Sweet Potato and Tahini Mousse
Serves 1

Ingredients:
200g sweet potato mash (previously roasted and the flesh mashed with a fork)
1 banana, frozen in chunks
½ tsp each: cinnamon, maca
1 tbsp tahini
1 date, pitted
2 tbsp milk, more or less according to thickness
Topping suggestions: cacao nibs, granola, nuts, seeds, berries, banana, nut butter

Method:

  1. Place all the ingredients in a blender and whizz until smooth, adding more milk for a runnier smoothie bowl consistency (or even runnier for a drinkable smoothie) or less milk for a mousse-like sweet potato bowl. You will need to scrape the sides down regularly.

  2. Serve straight away in bowls (or keep in the fridge for a couple of hours to serve later) and then finish off with your desired toppings.
