I’m so excited to kick-start my Nourishing Amy Advent with you all today and what a treat I have lined up for you in the build up to the 25th. Lots of recipes, inspirational self-care messages and a few surprises along the way… I hope you’ll enjoy being on my very nice list as much as I have done so creating it!
This first recipe may not scream CHRISTMAS to you… but at a time of indulgence, mince pies and lots of mulled wine, it’s always good to start the day with a healthy but delicious breakfast to get you going. Although this is called a pudding this is definitely breakfast material thanks to the abundance of nutritious goodness. So, what is in this Chocolate Protein Pudding? Chocolate, of course, in the form of raw cacao powder and chocolate protein powder – I was kindly sent a chocolate sea salt flavour which I am loving at the moment (if you are not a protein powder fan then feel free to sub this for some extra cacao powder and 1tbsp maple syrup). The creamy pudding-like texture is thanks to a luscious blend of frozen banana and avocado – yes, you can eat your chocolate and get your greens all in one go! This means you’ll be full of healthy fats, protein and fibre for a balanced breakfast. I’ve blended mine with coconut milk for a tropical twist and then piled it high with the best toppings as we all know this is most fun part – chocolate granola, berries, nut butter and cacao nibs were my weapons of choice here but feel free to go as crazy as you like. This breakfast is heaven in your mouth and I have to pinch myself as a reminder that it is healthy and classes as a nutritiously balanced breakfast because it just tastes like chocolate pudding. With a texture akin to a silky-smooth dessert, this breakfast will keep you going back for more all day long.
Chocolate Protein Pudding
A creamy, protein and veggie packed breakfast bowl that tastes just like chocolate pudding.
- 1 ½ large bananas, frozen in chunks
- ½ large avocado
- 30-40g chocolate protein powder
- 1 tbsp cacao powder
- 50-100ml coconut milk
- To serve: chocolate granola, berries, nut butter, cacao nibs
- Place all the ingredients for the pudding in a blender and process until smooth, adding more milk as necessary to make a creamy texture.
- Pour into a bowl and serve with your desired toppings.
