Chocolate Chip Cookie Dough Truffles

Is there ever a bad time for chocolate? I don’t think so… and with Easter only a few days away, these are the perfect treat to whip up in no time at all. Yes, they only take 10 minutes to make and 1 hour to set and then you have deliciously creamy, rich and indulgent Chocolate Chip Cookie Dough Truffles… no one needs to know that they are actually healthy.

I have played around with similar recipes for a while now and love experimenting with different ways to make chocolate truffles, as you can see with my Hazelnut Chocolate Truffles and my Salted Chocolate Coconut Truffles – they really are so simple. While there are such amazing vegan chocolates on the shelves today, homemade chocolate truffles really are so much cheaper and more satisfying to make and devour. And with this new recipe, the truffles won’t be around for long.

These Chocolate Chip Cookie Dough Truffles combine a few of my favourite things: chocolate, peanut butter and cookie dough. The secret to combining them all together in one tasty mouthful is with coconut flour. I love the crumbly, moist and cookie-dough-like texture that it lends to bakes and raw-bakes and here it works to dry out the peanut butter and syrup and bind the mix. The cookie dough flavour also comes from the sweet syrup – just enough but not too much. All you need to finish these truffles is some chocolate and that’s it – only 4 ingredients! I like to use the same chocolate for the chips and for coating the truffles but that’s up to you. There is also the optional added extra of sprinkling on some desiccated coconut, too, for that wow factor.

These truffles will make a great gift or centre attraction at family and friend gatherings this Easter but remember you can make them all year round, too!

Chocolate Chip Cookie Dough Truffles

Delicious chocolate truffles with a crumbly cookie dough centre and a creamy chocolate shell – the perfect vegan, gluten free and refined sugar free dessert or sweet treat.


Ingredients

  • 100g peanut butter
  • 15g fruit syrup
  • 10g coconut flour
  • 20g + 60g chocolate chips
  • 1 tsp desiccated coconut, optional

Directions


1. Stir together the peanut butter, fruit syrup and coconut flour until smooth and thick. Stir in 20g chocolate chips and roll into 5 balls. Place onto a lined baking tray and cool in the freezer for 30 minutes.
2. Melt the remaining chocolate chips and roll each ball in the chocolate and sprinkle with desiccated coconut. Transfer back to the tray and cool in the fridge for 30 minutes or until set.

    Hi Amy. Can you recommend to me another alternative to Peanut butter since I am not a fan of PB. Would I be able to use another nut butter like coconut or almond? Since your homemade chocolate 🍫 truffles look so much more better then shop brought ones. Your truffles look super easy indeed even for a beginner cook like myself. I wish I could make these for Easter 🐣!! I don’t think I have time xxx Of course I will tag you into my creations from your recipes
