A thick and creamy fruit-and-veg-filled smoothie bowl that packs so much rich chocolatey flavour and zingy fresh ginger. A speedy, vegan, gluten-free breakfast bowl that comes together in 5 minutes for a nutritious and delicious start to the day.

I love smoothie bowls, one look from my social media posts and on the posts that I engage with on will prove that. They are so easy to make and can be the best way to start the day – although these are also great speedy dinners if you’ve had a heavy savoury lunch. This Chocolate Berry Ginger Ninja is the ultimate balance between a light and refreshing bowl while being packed with flavour, richness and creaminess. That is exactly how I like my smoothie bowls.

The base is frozen banana and frozen courgette, you do not taste the courgette, but it adds extra thickness and texture along with the banana. You can swap this though for an extra half a banana, but I always think it is fun to pack in vegetables without realising it. The second serving of vegetables is the spinach which is a go-to for all my smoothie recipes although it does turn the mixture a darker purple colour almost instantly.

I use mixed frozen berries here as it really does not matter which ones you use – opt for your favourites or a combination. My favourite mix is raspberries, strawberries, blueberries, blackberries and red currants. Which leads me to the chocolate protein powder* – perhaps my favourite flavour! I am a big fan of adding protein powders to my breakfasts as my 3 Ways with Baked Oats and Salted Caramel and Date Buckwheat Porridge will prove. They make the bowls more satisfying and protein-rich, although if you are not a fan you can add 1 tbsp of cacao instead, see the recipe.

Now for the “ginger ninja” part thanks to a good knob of fresh ginger, peel it and throw it in. You’ll be surprised how well it goes with the berry and chocolate combination. All brought together with some delicious plant-based milk and that’s it. I’ve used a new soya milk here – which only has 2 ingredients from Plenish. It’s a high protein source and I love their focus on natural ingredients without using thickeners or gums – use your favourite milk e.g. almond, oat, coconut or hazelnut.

The fun part is all in the toppings. I’ve gone for some blueberry almond yoghurt, strawberry chia seed jam, chocolate orange protein balls*, mixed seed and coconut muesli, soya protein crispies and mixed fruits.

This recipe takes 5 minutes and comes together in one blender while being super smooth, thick and creamy. It is bursting with fruit and vegetable goodness, healthy fats and nutrients. It has a great balance between refreshing and rich chocolatey flavours and is a great base for any number of toppings. It’s vegan, gluten-free, nut-free and crowd-pleasing.

Ingredients

  • 1/2 banana, frozen
  • 1/2 courgette, frozen
  • 180g mixed frozen berries
  • 1 scoop chocolate protein powder* (or 1 tbsp cacao powder)
  • 1 knob ginger, peeled
  • 1 tbsp flaxseed
  • 120-150ml soya milk
  • 1 large handful spinach
  • Topping suggestions: 1 tbsp blueberry yoghurt, 1tsp strawberry chia jam, chocolate orange protein balls, fruit, muesli seed mix, protein crispies

Directions


1. Place all the smoothie bowl ingredients in a blender or food processor and blend until smooth and creamy, scraping down the sides as necessary.
2. Serve in a bowl with your favourite toppings.

    Aww amazing and I have just found my vibes for smoothie bowls. I am s beginner cook as you know and I am so enjoying using my new food blender. When I was on my hols recently with my parents I took my food blender with us in the car, so when I was away I could make smoothie bowls. They are so straight forward however I wish I could make before I go to work early in mornings. But I never have time and how do you meal prep smooothie bowls?
