Mango Pumpkin Spice Smoothie Bowl

This autumnal-inspired smoothie bowl is the perfect cross-over for the late summer sunshine and the cooler September days. A thick and creamy fruit and vegetable-packed breakfast bowl or smoothie that packs lots of warming, cosy flavours and is full of nutrition.

My social feeds seem to be covered with pumpkin pie spiced recipes at the moment so I wanted to share this Mango Pumpkin Spice Smoothie Bowl with you right away; firstly because you can never have too many smoothie recipes and secondly because it features my first DIY pumpkin pie spice blend which I am pretty addicted to.

Pumpkin pie spice may not be a huge thing here in the UK but in the USA, I can imagine you can buy it by the bagful. Not that I mind, as this homemade blend is really easy to make from store cupboard essentials and it feels so much cosier when it is homemade. Throw some ground cinnamon, ginger, nutmeg and clove together and store in a glass jar for all your pumpkin pie spiced recipes – there will be a few more coming to this blog.

The first of these autumnal recipes is my Mango Pumpkin Spice Smoothie Bowl which really puts into food-form the changing of the seasons. This bowl is much heartier, thicker and creamier with a much cosier and wholesome taste to it compared to the berry-pink smoothie bowls of summer. The base is the classic banana and then instead of pumpkin, I’ve added pre-roasted or steamed and then frozen sweet potato. This step you’ll need to do the night before but is easy enough if you are roasting some sweet potatoes for dinner – save some to pop in the freezer. Leave the skin on or peel it – however you prefer. Alternatively, you can roast a whole sweet potato in the skin and scoop out the flesh after about an hour. Allow to cool and pop into a freezer bag.

Another layer of creaminess comes from the mango which adds a summery vibe and flavour to the smoothie bowl. Not forgetting the frozen courgette which sneaks in an extra veggie and smooth texture without being able to taste it!

The turmeric blend adds a vibrant golden tone to the recipe while there is an optional vanilla protein addition for added protein and staying power. Remember you can add double the milk to the bowl to make a drinkable smoothie or keep it thick and serve it in a bowl with toppings. When it comes to toppings – anything goes! This one is quite summery with kiwis, extra banana slices and figs while I’ve also added some granola for crunch and yoghurt for creaminess – it is all about textures. It is also great with nut butter on top and lots of nuts and seeds.

Packed with fruit and vegetables, it also counts as 4 of your recommended daily intake thanks to the extra courgette, too! It is smooth and creamy, making a delicious breakfast, brunch or snack bowl with endless topping possibilities.

A simple homemade pumpkin pie spice blend that requires 4 ingredients and comes together in 2 minutes for all your favourite autumnal recipes.

Ingredients

  • 3 tbsp ground cinnamon
  • 2 tsp ground ginger
  • 2 tsp ground nutmeg
  • 1 ½ tsp ground clove

Directions


1. Stir all the ingredients together and store in an airtight jar or container.

Ingredients

  • 1 banana
  • 80g frozen (pre-roasted or steamed) sweet potato
  • 80g frozen courgette, chopped (or 1 extra banana)
  • 80g frozen mango cubes
  • 100-150ml cashew milk
  • 1 tsp turmeric blend (or 1/2 tsp ground turmeric)
  • 1/2 tsp pumpkin pie spices
  • 1 tbsp cashew yoghurt
  • 2 scoops vanilla protein, optional
  • Topping suggestions: figs, kiwi, banana, granola, raspberries, yoghurt

Directions


1. Place all the smoothie ingredients into a blender and process until smooth and creamy. Add more milk as necessary to reach the desired texture- adding more milk for a drinkable smoothie.
2. Pour into a bowl and serve with your chosen toppings.
