Happy world porridge day! Yes, there is a day every year to celebrate the wholesome, delicious and humble bowl of oats. And it is a pretty good day, wouldn’t you agree? Oats, oatmeal or porridge, wherever you come from and however you call them, a bowl of warming oats makes for a really easy and nutritious breakfast. We all know they are filled with fibre, are a great source of whole-grain foods and are low fat, but they don’t have to just be that. A lot of people outside of the foodie-sphere will have their oats cooked in milk and that’s it. Maybe a bit of honey or banana as a topping, but one scroll through social media this time of year (or any!) and you’ll find a whole wealth of inspiration.

From rich and indulgent flavour combinations to sweet and fruity ones, a bowl of oats is a great base for any number of combinations. I like to play around a lot with different flavours, textures, fillings and toppings and they feature quite a lot on my social media. I sometimes love one type so much that I’ll make it again and again, but I do try to change it up.

A few of my favourites have to be Chocolate Peanut Butter Oats, Hazelnut Mocha Oats, Carrot Pear Chai Buckwheat Porridge and don’t get me started on baked oats and overnight oats! There is so much you can do with them, it is rather exciting.

So, for this latest recipe for Chai Latte and Apple Oats, I opted for the warming spices of a cosy chai latte, made creamy with almond butter, plant-based yoghurt and your favourite plant-based milk. I used pistachio milk for this and it was dreamy, although almond, cashew, coconut or soya would also work wonders.

The main chai flavours come from a brewed chai teabag to keep this recipe really simple. Brew the tea in a small amount of hot water and add to the other porridge ingredients. When the oats are almost ready, stir through the grated apple – which adds volume, texture, flavour and a portion of fruit. I also like to stir through a little vanilla protein powder which increases the sweet vanilla chai taste as well as adding a creamy texture and a boost of protein – you can also leave this out.

Then comes the toppings! The sticky caramelised apple feels like such a treat but it only takes a couple of minutes. Prepare a few thin slices of apple, fry off in a little coconut oil until sticky and smelling fragrant. Add on top of your Chai Latte and Apple Oats and enjoy with some more creamy almond butter, chocolate caramel sauce and fruit.

Try out this date caramel sauce for a delicious sweet sauce topping.

These Chai Latte and Apple Oats are cosy, comforting and spiced with lovely chai flavours but won’t involve lots of spice jars. Prepare these oats in less than 10 minutes, complete with sticky caramelised apple slices and lots of wholesome, nutritious and fun toppings.

A rich, warmingly spiced bowl of porridge with creamy yoghurt, sticky toasted apple slices and lots of comforting flavours. This vegan, gluten-free and protein-packed bowl is a great way to start the day.

Ingredients

  • 40g oats
  • 1 chia tea bag
  • 150ml pistachio or creamy plant-based milk
  • 2 tbsp plant-based yoghurt
  • 1 tbsp almond butter
  • 1 scoop vanilla protein, optional
  • 1 apple
  • Coconut oil
  • 1 tbsp chopped pecans and almonds
  • Extra fruit
  • Chocolate caramel sauce
  • Extra almond butter

Directions


1. Soak the teabag in 50ml boiling water for 10 minutes and remove the teabag. Slice a few pieces of apple from the centre and grate the rest of the fruit.
2. Add the oats, milk and tea to a saucepan and warm gently until thick. Add in the almond butter, grated apple and protein powder, if using. Stir until combined.
3. Meanwhile, heat 1 tsp coconut oil in a frying pan and add the apple slices. Fry until golden brown and smelling sweet.
4. Just before serving, stir through half of the yoghurt into the oats.
5. Serve the oats topped with the remaining yoghurt, chopped nuts, caramelised apple slices, extra almond butter, fruit and chocolate sauce.

    A VERY HAPPY BELATED WORLD PORRIDGE DAY! To my great friend Amy, it’s amazing how many ways you can cook with the humble oats. I am still trying to learn how to make Overnight Oats and not make it gloopy ahhh, I will check back for your overnight oats recipes for sure.
    Your above porridge looks insane and I can’t have normal apples but stewed I can. But I so want to try the above camerialised apples and wow the sauce looks super yummy.
