My love for oats continues along with my current obsession with anything and everything pumpkin pie spiced – it is October, after all. With Halloween, thanksgiving and other pumpkin-themed recipes coming, I wanted to put my DIY Pumpkin Pie Spice Blend to another use. Breakfast is the perfect opportunity to start your day with something that tastes like dessert – warming cinnamon aromas and a creamy oat base. Like any overnight oat recipe, start by soaking your oats in some plant-based milk overnight to allow the oats to swell and turn really creamy and plump. I add in some chia seeds for added fibre, protein and thickness as well as some raw quinoa grains. I love adding little extras to my jars for a real boost of nutritious goodness – plus the texture is great. Stir in a little seasonal pumpkin pie spices and leave to soak.

The cinnamon pears are equally as simple and rely on fresh, juicy pears, cinnamon and some caramel-rich coconut sugar. Toss the pieces together and bake for 20 minutes until soft.

I love to serve these Pumpkin Pie Spice Overnight Oats with Cinnamon Pears with creamy, cooling vegan yoghurt (I like coconut or almond), lots of nutty-rich almond butter and fresh raspberries. The possibilities are endless. Serve these with Chocolate Chai Peanut Butter, other fruits, some crunchy Chai Spiced Crunchy Granola and anything your taste buds desire.

Thick and creamy overnight oats filled with pumpkin pie spices perfect for a quick and easy breakfast. Serve with sticky and fruity cinnamon baked pears for a juicy and wholesome combination that is great this time of year (or any!).

Ingredients

  • 80g oats
  • 2 tbsp quinoa
  • 2 tbsp chia seeds
  • 360ml plant-based milk
  • 2 tsp DIY pumpkin pie spice blend
  • Cinnamon Pears:
  • 6 pears
  • 1 tsp cinnamon
  • 2 tbsp coconut sugar
  • To serve:
  • 2 tbsp vegan yoghurt
  • 2 tbsp almond butter
  • 1 handful raspberries

Directions


1. Make the cinnamon pears: preheat the oven to 160Fan/180*C. Slice and de-seed the pears and chop into 1-cm cubes. Toss with 1 tsp cinnamon and 2 tbsp coconut sugar. Bake in an ovenproof dish for 20 minutes until tender and sticky.
2. Prepare the overnight oats: stir together the oats, quinoa, chia seeds, plant-based milk and pumpkin pie spices and leave in a sealed jar overnight until thick and creamy.
3. Serve the oats with the cinnamon pears, some vegan yoghurt, almond butter and raspberries.

    Hey Amy. Just having time to read through my favourite food blog of yours. Aww your Pumpkin 🎃 Spice Overnight Oats look so delicious! I so need to try and make, where do you get pumpkin spice diy food mix from and I don’t have any sealed jars like mason jars. Only one but it’s for drinks, can you use glass cups or sealed Tupperware boxes for? I so need to keep jam jars to make overnight oats. Btw I have tried to make before but mine always is so liquidy for sure, how do you make yours so great? Super photography and so dreamy- I so want to bake for Pumpkin spice cookies for trick and treaters for Halloween. Hope I get some time to make xxxx 🤗🌱😋💖
