Donut meets cookies in this light and fluffy vegan baked donut topped with a creamy coconut yoghurt frosting and crunchy chocolate-y cookies. They are chocolate-y rich and high in protein and easy to make with only 8 ingredients.

If I had to choose between a donut and a cookie, I would probably choose a cookie. But, for this recipe, I didn’t want to make you choose between the two. So, I combined them to make one delicious and dreamy creation. I first made this recipe for My Vega protein whose protein blends are loaded with greens and vitamins for an added boost of nutrition. Not content with leaving the recipe just on social media, I wanted to bring it to my recipe archive so we can all make it whenever that donut-cookie craving hits. If you aren’t a fan of protein powders, you can use extra flour instead (to make the total 200g of flour) and add 1 tsp vanilla essence.

These Vegan Oreo Donuts are really easy to make as all the base ingredients go into one bowl, stir them together and bake in a donut mould. As I’ve mentioned in previous donut recipes (see my Chai Orange and my Tiramisu Chocolate Chip creations) I use a silicone donut mould which still requires you to grease it lightly for the neatest of donuts. Fill the holes and bake for 12-15 minutes – that’s all there is to it. The hardest part of these Vegan Oreo Donuts, as always, is waiting for them to cool!

The creamy coconut frosting is simply coconut yoghurt – you want the thick kind and the thicker the better. I like to use vanilla to compliment the vanilla donut base and to taste more cookie-like. Then comes the crumbled Oreo cookies!! Go as crazy as you like.

I’ve loved serving these Vegan Oreo Donuts to friends and family as they are so simple to whip up and they always go down well. Most Oreo and similar cookies are vegan-friendly but just check the labels to be sure.

These donuts are light and fluffy with a muffin-like texture and smooth yet crunchy topping. They are naturally vegan, healthy, baked and great for your sweet tooth.

Donut meets cookies in this light and fluffy vegan baked donut topped with a creamy coconut yoghurt frosting and crunchy chocolate-y cookies. They are chocolate-y rich and high in protein and easy to make with only 8 ingredients.

Ingredients

  • 166g plain flour (or spelt, buckwheat of preferred GF blend)
  • 34g Vega Essentials Vanilla Nutritional Powder (1 scoop)*
  • 1/2 tsp baking powder
  • 90g syrup (maple, coconut or fruit)
  • 60g melted coconut oil
  • 240ml coconut milk
  • 150g vanilla coconut yoghurt
  • 6 Oreo-style cookies, crushed

Directions


1. Preheat the oven to 160Fan/180*C and grease 10 donut holes.
2. Stir together the flour, Vega Essentials, baking powder, syrup, melted coconut oil and coconut milk. Whisk thoroughly until combined to a smooth batter.
3. Divide the batter between 10 donut holes and flatten down. Bake for 12-15 minutes until firm to the touch and springy.
4. Allow to cool in the tin before removing carefully from the mould and leaving to cool fully on a wire rack.
5. Dip the donuts into the vanilla coconut yoghurt to form a thick layer (or spread on top_ and top with the crushed Oreo cookies.
* if you are not using protein powder, add in extra flour to make the total 200g and add 1 tsp vanilla essence.
