Crumbly, oaty, sticky and sweet flapjack-style bars layered with gooey vegan marshmallows and melted dark chocolate topped with an oaty crumble. These quick and easy, 10-ingredients bars are perfect as a gluten-free, vegan and healthy snack or dessert.

I had so much fun making these bars themed about Bonfire night, but marshmallows are not only for the 5th November! S’Mores may be an American tradition around the campfire, but it is a tradition that I’d love to experience more of here in the UK. At a wedding this year (remember, I made their wedding cake?!) after all the dancing and the food, there was a late-night S’Mores station. Jars of vegan biscuits, slabs of chocolate and huge marshmallow by a fire ready for toasting. This was part of the inspiration behind these bars as I really enjoyed the gooey melted marshmallows as they melt the chocolate all sandwiched between crumbly biscuits. It’s pretty dreamy. And it is not too often you find vegan ones, so I decided to turn these somewhat messy desserts into a simpler and easier-to-eat bar.

These Vegan S’Mores Crumble Bars are just that. They are a healthier alternative as the biscuit is replaced with a flapjack-style oaty base filled with oats, spelt flour, coconut oil and a little syrup. It’s a really naturally sweet and hearty base perfect for a sprinkling of mini vegan marshmallows and lots of chocolate. Top with the same flapjack-style oaty mixture and bake for 20 minutes to allow it all to melt together. The smell is just as you’d expect from S’Mores on bonfire night!

I first made these with Divine Dark Cacao Nib Chocolate, and it worked a treat, although you can use any vegan chocolate that you like here. You can also use vegan butter or margarine instead of the coconut oil and use buckwheat flour for the gluten-free version. Just be sure to check your marshmallows as they are NOT naturally vegan-friendly.

These Vegan S’Mores Crumble Bars make sure a delicious dessert served warm with ice cream and thick yoghurt or enjoyed cold with a cup of tea. They are deliciously sweet from the marshmallows, hearty and wholesome from the flapjack-style base and have lots of chocolate-y goodness.

These Vegan S’Mores Crumble Bars take less than 30 minutes from start to finish, requiring 10 simple ingredients and minimal washing up. They are family-friendly and are great to make for friends and family looking for a sweet treat.

Crumbly, oaty, sticky and sweet flapjack-style bars layered with gooey vegan marshmallows and melted dark chocolate topped with an oaty crumble. These quick and easy, 10-ingredients bars are perfect as a gluten-free, vegan and healthy snack or dessert.

Ingredients

  • 90g (1 cup) oats
  • 160g (1 cup) spelt or buckwheat flour
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • 2 tbsp cacao nibs
  • 60g (1/3 cup) coconut oil, melted
  • 110g (1/3 cup) syrup
  • 35g vegan marshmallows
  • 40g vegan chocolate, chopped small

Directions


1. Preheat the oven to 160Fan/180*C and line a tray with baking parchment (I used a 16cmx16cm tin).
2. In a food processor, blitz together the oats, spelt flour, salt, cinnamon and baking powder to mix. Pour in the melted coconut oil and pulse until a crumbly mixture forms. Stir in the cacao nibs by hand.
3. Press 2/3 of the oat mixture into the pan.
4. Tear the marshmallows apart (or use mini marshmallows) and press into the oat base. Top with the chopped chocolate and sprinkle over the remaining oat mixture. Press everything down lightly.
5. Bake for 20 minutes until the crumble top is golden and the marshmallows are juicy.
6. Allow the bars to cool slightly before removing from the tray and slicing.

    Oh my days my great friend Amy- honestly your Vegan S Mores sounds divine! I so like vegan chocolate 🍫 and I have just found Mallow and Marsh veggie/vegan marshmallows. Are these good and I have just found vegan butter as well, I have never tried it’s Flora. Super photography and of course I tag you into my creations using your recipe. If I don’t burn mine and I so want to try Divne chocolate, can I use Moo free vegan original choc? I love flapjacks and oaf treat and I am drooling.
