What happens when my love affair for banana bread meets with my obsession with mince pies? Mince Pie Banana Bread with Cream Cheese Frosting, obviously. This has been one of the most exciting Christmas bakes I’ve made this year and I’ve been really looking forward to sharing the recipe with you. It was such a hit with my family and I hope it will be with yours, too.

It is easy to make and based on my beloved recipe for the Ultimate Banana Bread, which is pretty fail-proof and so simple to make. The wet ingredients go into one bowl, the dry ingredients are added to the wet. Give it a quick stir and bake! What makes this Mince Pie Banana Bread with Cream Cheese Frosting so festive is the mixed spice within the banana loaf and the mincemeat laced in the bake. Simply add spoonfuls of mincemeat into the cake batter and drag a knife through to create a loose-swirl pattern. And then there is the mincemeat cream cheese frosting. More mincemeat is added to vegan cream cheese with a little syrup and spread on top of the cooled cake for a really decadent and delicious dessert.

This Mince Pie Banana Bread with Cream Cheese Frosting is perfect enjoyed with loved ones with a cup of tea or even as a great festive breakfast or brunch. It comes together in less than 40 minutes (or quicker if you make 2 smaller loaves) and makes the kitchen smell wonderful. Make this rich, sweet, sticky yet quite a healthy recipe for friends and family. It has all the familiarity of a mince pie with the light deliciousness of a banana loaf.

A light and fluffy banana bread loaf laced with spiced mincemeat and topped with sticky sweet mincemeat infused vegan cream cheese frosting. A festive match made in heaven. It is vegan, dairy-free with gluten-free options and easy to make in 40 minutes.

Ingredients

  • 3 ripe bananas, mashed
  • 2 tbsp chia seeds
  • 60ml (1/4 cup) almond (or other) milk
  • 2 tbsp sunflower, olive or melted coconut oil
  • 2 tbsp syrup
  • 1 tsp vanilla essence
  • 30g (¼ cup) coconut sugar
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp mixed spice
  • 210 g (1 ½ cups) flour e.g. white, spelt (or half and half / your preferred GF flour)
  • 100g mincemeat
  • 200g vegan cream cheese
  • 2 tbsp syrup
  • 2-3 heaped tbsp mincemeat

Directions


1. Preheat the oven to 160Fan/180*C and line 1 large or 2 smaller loaf tins with baking parchment.
2. Stir together the mashed banana, chia seeds, milk, oil, syrup, vanilla essence and coconut sugar and leave to one side for 10 minutes.
3. Add in the baking powder, bicarbonate of soda, mixed spice, flour and stir until combined and fairly thick.
4. Pour half of the mix into the tin(s) and spoon over the mincemeat using a teaspoon. Drag a knife through the mincemeat to mix in with the banana bread batter. Top with the remaining mixture. Smooth over the top.
5. Bake for 25-30 minutes for smaller loaves and 35-40 minutes for a large loaf. Allow to cool in the tin for 10 minutes, remove and cool fully on a wire rack.
6. Stir together the vegan cream cheese and syrup until smooth and then gently fold in the mincemeat. Spread over the mince pie banana bread(s).

Splendid photography as always and super photography as always 🤗🌱🎄Such a Christmassy bake and wishes I could have made this for me and my parents Boxing Day pudding. I have never tried vegan cream cheese before I don’t really like the original dairy one- want vegsn crewm cheese do you like? xxxx
