Gooey Chocolate Blueberry Flapjack

Rich and crumbly nutty flapjack studded with juicy blueberries and sweet rich chocolate. These bars are naturally vegan, dairy-free and gluten-free and are easy and quick to make. They are a great mid-afternoon snack, delicious breakfast or enjoyed with a cup of tea.

I do love a good flapjack bar but more often than not, I find the shop-bought ones far too sweet and sickly. So, I thought it was about time to change all that. And given that it’s quite chilly here in the UK now, I was only too happy to spend the afternoon in the kitchen playing around with a simple, wholesome and tasty treat.

These Gooey Chocolate Blueberry Flapjack come together really easily in one bowl before pressing them down and baking in the oven. Wait for them to cool slightly before slicing into flapjack bars and then enjoy with a warming cup of tea.

The chocolate and blueberry combination is inspired by a delicious bar of chocolate from Divine (whom you may recognise from other chocolate-themed recipes on here) and while I highly recommend trying the blueberry chocolate, you can use your favourite bar instead. I like dark chocolate more, but you can use a sweeter milk chocolate, too. You can also use fresh or frozen blueberries – both options will work just as well. Given that it is winter right now, it is very handy to have some frozen berries in the freezer for bakes like this or these.

That’s all there is to it… all that I have to say is that these Gooey Chocolate Blueberry Flapjack really are chewy, gooey, crumbly and crunchy all at the same time. They have sticky sweet blueberries that burst in your mouth and rich melted dark chocolate adds an indulgent dimension to these healthy snack bars.

While they are naturally gluten-free and refined sugar free, it will depend on the oats, chocolate, and syrup that you use so just read the labels where necessary. Rich and crumbly nutty flapjack studded with juicy blueberries and sweet rich chocolate. These bars are naturally vegan, dairy-free and gluten-free and are easy and quick to make. They are a great mid-afternoon snack, delicious breakfast or enjoyed with a cup of tea.

Ingredients

  • 280g oats
  • 50g oat flour (or oats blitzed into a fine flour)
  • Pinch of salt
  • 80g coconut oil, melted
  • 190g cashew or almond butter
  • 100ml syrup
  • 100g blueberries, frozen or fresh
  • 80g Organic Blueberry Chocolate, in chunks, or dark chocolate

Directions


1. Preheat the oven to 160Fan/180*C and line a baking tray.
2. Stir together and oats, oat flour and a pinch of salt. Melt together the coconut oil, cashew or almond butter and syrup in a saucepan until runny and pour over the oat mixture. Stir to combine and fold in the blueberries and the chocolate chunks until sticky.
3. Pour into the lined dish, press down firmly and bake for 20 minutes until golden on top. Allow to cool for 10 minutes before slicing and cool fully. Store in an airtight container for up to 5 days.
