Vegan Chocolate Truffle Cookies

Crumbly soft cookies and rich indulgent chocolate truffles combine in one impressive and simple sweet snack. These cookies are naturally vegan with fully gluten-free options, too, while being simple and quick to bake.

Around this time of year (currently Valentine’s Day season here in the UK) everyone is talking of love and relationships and there are chocolate gifts galore. But there is no better way to show your love than with something homemade. Baking is my go-to for heart-felt and personalised gifts and these little cookies are perfect for this time of year, and all year long.

These Vegan Chocolate Truffle Cookies are, naturally vegan as the title suggests as they use melted coconut oil and plant-based milk – just make sure you use dairy-free chocolate truffles. I love Divine’s heart-shaped truffles which are 70% dark chocolate and utterly delicious. You can use any shape truffle here, although I think the heart works really well as an extra dose of love!

The cookie dough is very simple, oat flour (make your own by blitzing oats into a fine flour), spelt flour (or use your favourite GF blend with xanthan gum or another binder in), raising agents, coconut sugar and the liquids mentioned above. It is quite a sticky and thick dough, but it rolls really well into balls. Flatted the dough down and press a chocolate truffle into each one.

The key to these Vegan Chocolate Truffle Cookies is the chilling time. A lot of really tasty cookies are made with chilled dough and it is even more important here as the chocolate truffles cool, meaning they do not heat up as much in the oven and lose their shape. They actually hold together very nicely and make for a really indulgent and melting centre. You do have to wait for the cookies to cool, though, as they are very delicate straight out of the oven.

Bake these Vegan Chocolate Truffle Cookies in 25 minutes (plus chilling time) and enjoy with a cup of tea, gift them to loved ones tied up in ribbon or keep them all to yourself! They are simple to prepare with minimal washing up and maximum flavour. The texture is crisp on the outside with soft crumbly inside and a creamy rich chocolate centre.

Vegan Chocolate Truffle Cookies

Crumbly soft cookies and rich indulgent chocolate truffles combine in one impressive and simple sweet snack. These cookies are naturally vegan with fully gluten-free options, too, while being simple and quick to bake.

Ingredients

  • 100g oat flour (oats blitzed into a flour)
  • 150g spelt flour*
  • 1 tsp baking powder
  • ¾ tsp bicarbonate of soda
  • Pinch of salt
  • 60g coconut sugar
  • 100g melted coconut oil, cooled slightly
  • 60ml plant-based milk
  • 10 Chocolate Heart Truffles

Directions


1. Stir together the oat flour, spelt flour, baking powder, bicarbonate of soda and a pinch of salt. In a second bowl, whisk together the sugar, coconut oil and milk until smooth.
2. Pour the wet mixture over the dry and stir until just combined.
3. Using a large tablespoon measure, roll each cookie into a ball and press down onto a lined baking dish. Press a chocolate truffle heart into the centre of each cookie.
4. Place the cookies in the freezer for 30 minutes or chill in the fridge for up to 24 hours.
5. To bake the cookies, preheat the oven to 160Fan/180*C. Bake the cookies for 12 minutes or until the edges are golden and crisp.
6. Allow to cool on the tray on a wire rack until cool and store in an airtight container.
*you can swap for your preferred GF blend with xanthan gum or another binder in, although I haven’t tested this.
