Cinnamon Raisin No Yeast Swirl Buns

Light and fluffy swirl buns laced with sweet cinnamon sugar and juicy raisins. These no-yeast buns take 30 minutes to make and are much easier than traditional buns. Glazed with a rich and sticky vegan cream cheese frosting, these buns are a great weekend bake.

Cinnamon buns without the yeast? No time needed for kneading or proving, these Cinnamon Raisin No Yeast Swirl Buns are all of my cinnamon bun prayers answered. They are still light and fluffy with a slightly crisp top layer thanks to a sugar-butter glaze before they bake. These mini buns are smaller versions of the huge buns you’ll see in the shops but at a fraction of the time and effort required, they are such a winning bake.

The time to leave the dough to prove and rise always makes me so anxious. What if the yeast wasn’t the optimum temperature? What if the airing cupboard (my “proving drawer”) is too hot or too cold? This easy recipe gets rid of all the doubt as I use self-raising flour instead.

Another reason I love this recipe is that it is a smaller batch although you could easily double the recipe to make either 10 much larger buns or to make 20 small ones, depending on how long you role the rectangle of dough. For this version, I use a piece of dough about 30x20cm.

My favourite part of these Cinnamon Raisin No Yeast Swirl Buns is the cinnamon sugar and raisin filling which turns wonderfully sweet and sticky in the oven. Once the buns are cool enough, spread the frosting over generously. I am a big fan of cream cheese frostings; I love the slightly tart edge they add to a usually-very-sweet glaze. Sprinkle over a little bit of sugar and cinnamon and serve these to friends and family with cups of tea, for an impressive brunch or enjoy as a dessert with custard.

Baked until fluffy and golden crisp on top, these buns are naturally vegan, slightly healthier and much simpler to bake.

Light and fluffy swirl buns laced with sweet cinnamon sugar and juicy raisins. These no-yeast buns take 30 minutes to make and are much easier than traditional buns. Glazed with a rich and sticky vegan cream cheese frosting, these buns are a great weekend bake.

Ingredients

  • 180g self-raising flour
  • 20g coconut or brown sugar
  • 120ml almond or soya milk, room temperature
  • 20g melted vegan butter or margarine, room temperature
  • 1 tsp vanilla essence
  • Filling:
  • 15g coconut or brown sugar
  • 1 tbsp cinnamon
  • 25g melted vegan butter or margarine
  • 50g raisins
  • Cream Cheese Glaze:
  • 100g vegan cream cheese
  • 1 ½ tbsp plant-based milk
  • 30g icing sugar

Directions


1. Preheat the oven to 160Fan/180*C and prepare an oven-proof dish by greasing with vegan butter or margarine.
2. In a large bowl add the flour and 20g coconut sugar. To a second bowl stir together the milk, 20g melted butter or margarine and vanilla.
3. Pour the wet ingredients into the dry and stir to bring the dough together. Tip the dough onto a lightly floured work surface and knead with your hands for 1-2 minutes.
4. Roll the dough flat into a rectangle about 1/2cm thick.
5. Stir together the 15g sugar and cinnamon for the filling. Spread most of the 25g melted vegan butter or margarine over the dough and sprinkle over the cinnamon sugar. Sprinkle over the raisins.
6. With the longest edge of the rectangle closest to you, roll the dough up to reach the top. Using a sharp knife, slice into 2-cm strips and transfer to the prepared dish. Nestle the buns close to each other. Spread over the remaining melted butter or margarine and bake in the oven for 20-25 minutes until golden and risen.
7. Allow to cool in the dish on wire rack until almost fully cool.
8. Stir together all the ingredients for the cream cheese glaze – use a whisk to get rid of any lumps and stir until smooth. Spread the glaze over the buns and sprinkle with extra cinnamon and coconut sugar.
