Minty Matcha Chocolate Nut Butter Cups

Rich and indulgent Dark Mint Chocolate thick-shelled cups filled with a creamy and vibrant green matcha cashew butter filling. They are easy to make, taste delicious and are naturally vegan, gluten-free and packed with flavour.

I love a good nut butter and chocolate snack; it is pretty much the dream snack. There are so many nut butter cups on the market today which is so great – especially the emerging demand for vegan, dairy-free ones. I love them all but there’s nothing quite like a homemade nut butter cup.

To jazz things up slightly these easy snacks have a vibrant green centre thanks to my love also for matcha green tea powder. The flavour is not overpowering here as the creamy cashew butter mellows it out – I think it’s the perfect balance. If you don’t have cashew butter, you could use almond butter or tahini, but I think peanut butter would overpower the matcha flavour. Stir the filling ingredients together and pop into the chocolate shell which is even easier to make.

These Minty Matcha Chocolate Nut Butter Cups are made minty by using mint dark chocolate (first made with Divine Chocolate), but you can use your favourite chocolate here and it will be delicious. Melt down the chocolate with a little coconut oil – this makes it really smooth with a luxurious texture to the nut butter cup.  Pour a little of the chocolate into the base of small or larger cupcake cases or silicone cases and freeze for 10 minutes before popping in the matcha cashew butter filling and covering with more chocolate.

Finish these Minty Matcha Chocolate Nut Butter Cups with a sprinkling of desiccated coconut and allow to set fully before devouring. These cups are seriously addictive! Even if you are not a huge fan of matcha, I’d recommend giving these a go as the blend of the rich dark chocolate and smooth subtle cashew butter is delicious.

Rich and indulgent Dark Mint Chocolate thick-shelled cups filled with a creamy and vibrant green matcha cashew butter filling. They are easy to make, taste delicious and are naturally vegan, gluten-free and packed with flavour.

Ingredients

  • 200g Mint Dark Chocolate
  • 1 tbsp coconut oil
  • 50g cashew butter
  • 1 tsp matcha powder
  • 1 tbsp maple or fruit syrup
  • 1 tsp desiccated coconut

Directions


1. Break up the chocolate and add to a glass dish with the coconut oil. Melt the chocolate over a bain-marie until smooth.
2. Either line a muffin or mini muffin tray with cases or use silicone cases and pour some chocolate into the bottom of each. For the large cups, using 2 tbsp and use 1 tbsp for the small cups. Place in the freezer for 10 minutes.
3. Meanwhile, prepare the nut butter filling by stirring together the cashew butter, matcha powder and syrup until smooth.
4. Get the chocolate cups out from the freezer and place a small amount of matcha filling (1/2 tsp for small cups and 1 tsp for larger cups) into the centre and smooth down. Divide the rest of the chocolate between the cups to cover the filling. Sprinkle with some desiccated coconut and place back in the freezer for 20 minutes or so until set.
5. Store in the fridge for up to 5 days.
