The thickest, most indulgent tasting chocolate smoothie bowl that packs in three portions of fruits and vegetables and could also be called dessert. This thick cacao packed bowl is also filled with reishi medicinal mushroom benefits and is naturally vegan and gluten-free.

It is a difficult time right now, that cannot be denied. And it is at times like this that we all need to pull together and also get a little more creative in the kitchen. With more us working from home than ever before, and with shops and ingredients being in such high demand, we may have to adapt. So how about sneaking in leftover vegetables into your breakfast or even dessert?

This Cacao and Reishi Thickest Chocolate Smoothie Bowl is the thickest, most luxurious smoothie bowl come pudding I think I’ve made. The creaminess comes from fruits and vegetables. The obvious ingredient is the banana – the riper the better! Then add in some cooked sweet potato – the natural sweetness and soft texture make this smoothie/pudding bowl a dream. Simply roast a sweet potato whole for an hour until tender and scoop out the flesh or you can steam the peeled chunks, too. Allow to cool then freeze in chunks until your smoothie bowl craving hits. It’s also a great way to use up leftover sweet potatoes that are turning or for when you’ve roasted up one too many.

The third portion is frozen courgette which I love adding to smoothies as it adds a great texture and creaminess without adding any vegetable flavour. Try it and you’ll soon be convinced.

And then we come to the chocolate. I love to use chocolate milk or kefir to blend up my Cacao and Reishi Thickest Chocolate Smoothie Bowl. However, you can also use your favourite plant-based milk and maybe add another teaspoon of cacao to the current tablespoon. If you want to add in some protein powder this is a great idea – my choice is chocolate or chocolate peanut blend, but vanilla would also work really well.

You’ll also see I’ve added in some reishi medicinal mushroom powder blend, but you can enjoy this chocolate pudding smoothie with or without it. Ingredients

  • 1 banana
  • 160g sweet potato flesh, previously steamed/roasted and frozen in chunks
  • 80g frozen courgette
  • 1/2 – 1 tsp Reishi mushroom powder
  • 125ml chocolate kefir, chocolate milk or other plant-based milk
  • 1 tbsp cacao powder
  • 20g protein powder, optional (chocolate or vanilla work best)
  • To serve: vanilla coconut yoghurt, chocolate hazelnut spread, fruit, cacao nibs, granola

Directions


1. Add all the ingredients to a blender and process until thick and creamy. Add more milk as desired for a thinner consistency.
2. Serve in a bowl with your favourite toppings.
