Vegan Flapjack M&M Cookies

Simple, delicious and chewy vegan oaty cookies studded with chocolate M&M that come together in 20 minutes. These cookies are naturally vegan, gluten-free and are a great alternative to your childhood favourite.

I first made these Vegan Flapjack M&M Cookies to celebrate a new vegan chocolate on the scene: peanut filled M&Ms from MiiRO that are seriously dreamy and give the original a run for their money. I had a look at a few classic Smarties/M&M cookie recipes but I wasn’t won over by all the vegan butter and sugar combination as I wanted to create something a little more exciting. I also love to make my recipes wholesome as well as indulgent. That is where the oats come in.

I am currently addicted to large flaked oats, not the quick cook ones, but the hearty and chewy kind. They add so much texture to these cookies, but you can use whichever variety you have – but the chunkier the better in my eyes. The second batch of oats are blitzed into an oat flour – you don’t need to specifically buy oat flour at vast expense. With a little maple syrup, coconut sugar, nut butter and oil, these cookies come together effortlessly.

The toughest part is not eating all of the batter straight from the bowl. The mixture will be quite sticky, so give your hands a little wash halfway through if they’re becoming too sticky to work with. Roll the dough into balls and flatten before pressing the M&Ms into the cookies – I used 3 per cookie as they are quite large but see the size of yours and adjust accordingly.

These chewy and moreish Vegan Flapjack M&M Cookies take 10 minutes to bake but don’t be tempted to grab one straight from the oven as they are quite delicate. Allow them to cool slightly before enjoying the sweet, sticky, flapjack-like cookie and melting chocolate.

The cookies make an impressive gift for Easter or throughout the year and feel really nostalgic. I used to love smarties/M&M cookies so it’s a real treat to be able to make something that tastes every bit as delicious as I remember but with a few added benefits, too.

Simple, delicious and chewy vegan oaty cookies studded with chocolate M&M that come together in 20 minutes. These cookies are naturally vegan, gluten-free and are a great alternative to your childhood favourite.

Ingredients

  • 75g oats
  • 75g oat flour (oats blitzed into a flour)
  • ½ tsp bicarbonate of soda
  • ¼ tsp salt
  • 60g maple syrup
  • 30g coconut sugar
  • 2 tbsp almond, cashew or peanut butter
  • 2 tbsp oil (e.g. melted coconut, sunflower, olive)
  • 1 tsp vanilla essence
  • 70g (approx. 30) vegan peanut M&M chocolates (or similar)

Directions


Method:
1. Preheat the oven to 160Fan/180*C and line a baking sheet with parchment paper.
2. Stir together the oat, oat flour, bicarbonate of soda and a pinch of salt. In a second bowl, stir together the syrup, sugar, nut butter, oil and vanilla essence. Pour the wet mixture over the dry ingredients and stir to combine.
3. Using a large tablespoon amount, roll the cookie dough into 10 balls and press down flat onto the baking sheet. Press in 3 M&Ms per cookie. Leave some room round each cookie as they’ll spread.
4. Bake for 9-10 minutes and remove from the oven. Allow them to cool on the baking tray for 20 minutes and then transfer to a wire rack to cool fully.
