Simple Red Pepper and Spinach Dahl

A comforting, wholesome and simple vegetable-packed dinner thatโ€™s easy to make from staple ingredients. This dahl is perfect with rice or flatbreads and some fresh crunchy slaw for a vegan, gluten-free and healthful meal.

Dahl is a staple meal in many households and for good reason. It is simple to make with only a handful of ingredients. It is also packed with plant-protein and can be amplified with any vegetables and spices that you fancy. Right now, these are the best meals to be making as they come together easily and still deliver on flavour and comfort.

This Simple Red Pepper and Spinach Dahl is made with onion, garlic, red pepper and tomatoes spiced with mild curry powder and some miso paste for a rich umami depth of flavour. Let it all simmer away until thick and creamy before adding in a splash of lemon or lime juice for a fresh zing.

I like to top my Simple Red Pepper and Spinach Dahl with some cooling creamy coconut yoghurt, fresh crunchy slaw โ€“ especially my Brussel Sprout Red Cabbage and Hazelnut Slaw. The contrast in flavours, textures, colours and temperatures is just my favourite thing! Add on some fresh herbs and hazelnut dukkha or mixed seeds and youโ€™ve got a comforting, wholesome and simple meal made from store cupboard essentials. You can also add some rice, flatbreads or other cooked grain with this dahl for a truly comforting meal.

A comforting, wholesome and simple vegetable-packed dinner thatโ€™s easy to make from staple ingredients. This dahl is perfect with rice or flatbreads and some fresh crunchy slaw for a vegan, gluten-free and healthful meal.

Ingredients

  • 1 red onion, small dice
  • 3 garlic cloves, crushed
  • 1 red pepper, small dice
  • 1 heaped tsp mild curry powder
  • 100g split red lentils
  • 1 tsp miso paste
  • 200g chopped tomatoes
  • 250-300ml water
  • 40g spinach, chopped
  • 1 tbsp lime or lemon juice
  • 2-4 tbsp coconut yoghurt
  • Olive oil
  • Salt and pepper
  • To serve: Brussel Spout Red Cabbage and Hazelnut Slaw, fresh chilli, fresh coriander, dukkha, lime wedges, rice, flatbreads

Directions


1. Heat a drizzle of olive oil to a medium-sized saucepan and cook the onion and garlic for 5 minutes. Add in the red pepper, fry for 5 more minutes before stirring in the curry powder.
2. Pour in the red lentils, miso paste, chopped tomatoes and water. Stir well, bring to the boil and simmer over a gentle heat for 20-25 minutes, stirring occasionally until thick and creamy.
3. Just before serving, stir in the lime or lemon juice and the spinach. Stir to wilt.
4. Either stir in the coconut yoghurt or serve it on top of the dahl along with your favourite toppings. Enjoy with rice and flatbreads, too.

    Hey Amy my great friend, every time you up your cooking game! I love curries and I have made my dads veggie curry for my godparents are vegan ๐ŸŒฑ l I actually hated shjwed your socials and blog to them and they have made some of your dishes as well.
    Ahh since of lockdown such foods are quite hard to get but love the fact that you have used just simple ingredients to make your dhal curry. I have never had dhal before always korma lol ๐Ÿ˜‚ as itโ€™s quite mild. I do like chilli for sure not to hot- never had lentils in curry. My favourite red peppers are and splendid photography as always.
    Looks so refreshing and vibrant like a rainbow ๐ŸŒˆ, can I changed the spinach to other veggies and do you add coconut milk to the sauce? Sorry for my beginner cook questions?
