Vegan Carrot Cake Muffins

Light and fluffy carrot cake muffins, with an orange vegan cream cheese frosting and crushed nuts, these are easy to bake this Eastertime and beyond. With simple ingredients, they come together quickly for a delicious treat with a cup of tea.

I always love being creative in the kitchen and carrot cake (or something typically Easter-themed) has been on my mind for a while. Now is the perfect time to spread a little joy and love through baking with family and friends with these festive, simple and delicious Vegan Carrot Cake Muffins.

They are cake-y and fluffy with the bonus of added vegetables, juicy raisins and warming carrot cake spices like cinnamon, ginger, clove and nutmeg. They are naturally moist thanks to the mashed banana which also adds to the low sugar content of these bakes.

I’ve also made these Vegan Carrot Cake Muffins healthier, lower sugar than usual and kinder to teeth by using Erythritol Gold from NKD Living. This brown sugar alternative looks, tastes and bakes very similarly to the traditional sugar and has the same sweet taste. It is a blend of three ingredients: erythritol, stevia and caramel – with erythritol being the main component. The caramel adds the gorgeous golden colour as well as the sweet nutty taste and texture of regular brown sugar. Other benefits include that it is low GI – great for people who want to maintain stable blood sugar levels

It is natural, non-GMO, vegan friendly and does not have a bitter aftertaste like I’ve found with some sweeteners. I’ve really enjoyed using it in my baking as well as in drinks like hot chocolates, stewed fruits, porridge bowls and caramelised bananas, too!

Now, back to the Vegan Carrot Cake Muffins! Allow them to cool before frosting them with a deliciously simple vegan cream cheese frosting – also sweetened with some Erythritol Gold for a lovely sweet taste. I’ve also added some grated orange zest which adds a lovely zing and subtle orange flavour. Decorate these Vegan Carrot Cake Muffins with whatever you like – I went for chopped almonds and a sprinkling more of Erythritol Gold, but you can add some more raisins, other nuts, cinnamon…

Studded with juicy raisins and warming spices, they are easy to bake with friends and family or little ones to have some fun in the kitchen. They are naturally low in sugar, kind to teeth and vegan-friendly all topped with a creamy frosting.

Light and fluffy carrot cake muffins, with an orange vegan cream cheese frosting and crushed nuts, these are easy to bake this Eastertime and beyond. With simple ingredients, they come together quickly for a delicious treat with a cup of tea.


  • 120g carrots, peeled and grated
  • 120g ripe bananas, mashed
  • 120g Erythritol Gold
  • 60ml sunflower oil
  • 30ml plant-based milk
  • 180g spelt or plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground cloves
  • Pinch of nutmeg
  • 60g raisins
  • Cream Cheese Frosting:
  • 120g vegan cream cheese
  • Zest 1 orange
  • 2 tbsp Erythritol gold
  • To serve: chopped almonds


1. Preheat the oven to 160Fan/180*C and line a 12-hole cupcake tin with cases.
2. Stir together the grated carrot, mashed banana, sugar, sunflower oil and milk.
3. In a second bowl stir together the flour, baking powder, bicarbonate of soda, cinnamon, ginger, cloves and nutmeg. Pour the wet mixture into the dry and mix until combined. Stir in the raisins.
4. Divide the batter between the cases and bake for 15-17 minutes until golden and risen and an inserted skewer comes out clean. Allow to cool fully on a wire rack.
5. To prepare the cream cheese frosting, whisk together all the ingredients until smooth and creamy. Spread onto the muffins and decorate with chopped almonds.

Ahh do you think I can order the characters online like amazon? As well splendid photography and your cakes look so delicately decadent and I so want to make vegan icing for sure. Never tried and so wish I could cook like you as well. You up youor baking game every time. I have saved the above to my WordPress collection.
