Vanilla Berry Acai Bowl

A vibrant, tropical and simple breakfast bowl filled with superfoods, fruits and plant-based protein. This acai bowl is perfect for breakfast or a snack and can be topped with anything you like.

I love a good acai bowl and I’ll often have one when I am out for brunch – there is something so satisfying about a rich, creamy and thick smoothie bowl filled to the brim with wonderful toppings. As important as the toppings are, it is essential to have a great base to start with.

I have made so many smoothies in the past from green avocado-based ones to lots of banana and chocolate or berry-licious varieties. As much as I love them all, there is something special about an acai bowl. They hit the wellness foodie scene a couple of years ago and they were all the rage. The craze has certainly died down, but their popularity remains, and for good reason. Acai is from acai palm trees in South American rainforests, where they are similar to grapes. The seed is large and means there is only about 20% of fruit per berry! They are vitamin and nutrient-dense, so they are often referred to as a superfood. They are full of antioxidants like other berries, fibre, heart-healthy fats and are even a source of calcium (read more here).

Acai tends to be sold in frozen sachets which you then add to your smoothie base. They’re really easy and versatile – simply blend with your favourite fruits and liquid. I’ve kept this Vanilla Berry Acai Bowl pretty simple using all my favourite things. Add in a ripe banana, some frozen berries, vanilla protein powder and some plant-based milk and blend till really creamy and thick. A high-powered blender really helps to keep the thick texture while making it smooth.

Then comes the fun part – the toppings! I was kindly gifted a whole breakfast bundle along with some frozen acai from Sambazon, so I used all of these for my toppings. And it was perfect! A bit of crunch is essential on top of any smoothie bowl, in my eyes, as well as something creamy and soft. So, I went for some granola (check out my PB Granola, Everyday Granola or Chocolate Raw Nola which are perfect for this), some cacao nibs, dried goji berries (or other dried fruits), chia seeds, fresh banana and strawberry and a little syrup, too. But use whatever you like – this really is the time to get creative.

A vibrant, tropical and simple breakfast bowl filled with superfoods, fruits and plant-based protein. This acai bowl is perfect for breakfast or a snack and can be topped with anything you like.

Ingredients

  • 100g frozen acai (or more frozen berries)
  • 1 ripe banana
  • 80g frozen berries
  • 1 scoop vanilla protein, optional*
  • 60ml plant-based milk
  • To serve:
  • Granola, dried goji berries, coconut, chia seeds, cacao nibs, chocolate peanuts, banana slices, strawberries, syrup

Directions


1. Add all the acai bowl ingredients to a blender and process until thick and creamy. Add more milk as necessary for a smooth consistency.
2. Pour into a bowl and top with your favourite toppings.
