Rocky Road is pretty much a childhood classic for a lot of people. It is something easy to make with parents and friends and is a take on the traditional and much-loved fridge cake. Or I suppose it’s also like the even-better-loved chocolate crispy cakes but taken to another level. That said, they are just so good and so simple. These easy vegan ones are just as delicious and decadent as you remember without any of the dairy.

They are easy to make in less than 10 minutes; you just need the patience to let them set in the fridge before slicing into thick bars and devouring. When the weather is warm, they can get messy so pop them in the fridge but when it comes to classic sweet treats like this… the messier the better!
What’s in these Easy Vegan Rocky Road? You only need 7 ingredients and you probably already have them at home. Use your favourite chocolate (I like dark chocolate and originally made these with Divine’s Mint Dark Chocolate), some coconut oil or vegan butter/margarine and some tahini or more vegan butter/margarine for the silky texture. Notice how we don’t need to add any syrup or sugar – they are perfect as they are and obviously if you use milk chocolate these Easy Vegan Rocky Road will taste sweeter.

Then add in the chunks to make these rocky roads, well, “rocky”. Smash up some vegan biscuits into small pieces, add in some vegan mini marshmallows, raisin (or other dried fruit) and some rice krispies. Stir it all together until glossy and evenly coated before pressing into a lined dish and chilling.
For the neatest slices, use a sharp knife warmed up with boiling water and wiped dry (this heats up the knife and allows for neater cuts) and enjoy a slice or two of these Easy Vegan Rocky Road with a cup of tea or after dinner as a dessert.

This vegan version is also easily gluten-free if you use vegan biscuits and cereals and is nut-free. It comes together with minimal and simple ingredients with little effort. They are also great fun to make with friends and family and are a great addition to a homemade afternoon tea.

Ingredients
- 180g chocolate
- 1 tbsp coconut oil or vegan margarine
- 2 tbsp tahini or vegan margarine
- 80g vegan biscuits
- 60g mini marshmallows
- 50g raisins
- 15g rice krispies
Directions
1. Break up the chocolate into a heat-proof bowl and add the coconut oil and tahini or butter/margarine. Place the bowl over a pan of simmering water and allow to melt.
2. Break up the biscuits into small pieces and add to a bowl with the marshmallows, raisins and rice krispies.
3. Pour over the melted chocolate and stir to combine. Pour into a lined tin (about 18x12cm) and press down firmly. Allow to set in the fridge for a couple of hours.
4. Slice with a sharp knife and enjoy.

What kind of biscuits did you use and what brand marshmallows did you use that are vegan?

Hi Deb, I used the Freedom Mallow marshamallows which are vegan-friendly and biscuits I used from Mr Organic but you can use anything you have at home!
