Tahini Chocolate Chip Cookie Crisp Cereal (Vegan GF)

Mini chocolate chip cookies that are oaty, crunchy and totally moreish made from a few basic ingredients. Serve these vegan and gluten-free mini cookies with milk as cereal or snack on them from a jar.

Just like the pancake cereal trend which I adapted to my Mini Oat Pancakes to ensure they didn’t fade with the trend; I’ve added my own twist to the cookie crisp cereal. There have been so many cookies crisp cereal recipes, but I want to make sure that these mini cookies are here to stay. They are just as delicious as ordinary cookies with the added fun-factor in how they are much smaller – why are mini things so much more fun to make?

I have kept the recipe for these Tahini Chocolate Chip Cookie Crisp Cereal (or mini cookies) very simple to only 8 basic ingredients. They are naturally gluten-free and vegan while also adding a fibre boost, too, and being free of refined sugars. The wet ingredients are coconut sugar, melted coconut oil or vegan butter/margarine, tahini (or another nut butter if you prefer), plant-based milk and vanilla essence. Add these to a bowl and stir in the dry ingredients: oat flour (blend your oats in a blender to a flour), baking powder and a pinch of salt. Stir through some chocolate chips and that is it!

There is no need to let this batter rest, simply start to divide into small pieces and roll into mini cookies. This is the slightly more laborious and time-consuming part, but it is equally therapeutic and requires little brainpower! Roll them into balls, press down onto a lined tray and bake until golden and crisp.

These Tahini Chocolate Chip Cookie Crisp Cereal are so easy and so delicious. While they are delicious eaten warm as a mini cookie snack, they are so good cold with milk like the much-loved cookie crisp cereal. I also love them with some warmed berries, melted chocolate and yoghurt like I have served them here. They are just so versatile.

The mini cookies are rich and crisp on the outside, slightly softer in the middle with lots of chocolate chips in every bite. The tahini flavour is subtle but delicious and mellows out the sweetness perfectly – although this cereal is much less sweet than the packaged variety! The oats make these mini cookies great for breakfast – just make sure they are certified gluten-free if needed.

Mini chocolate chip cookies that are oaty, crunchy and totally moreish made from a few basic ingredients. Serve these vegan and gluten-free mini cookies with milk as cereal or snack on them from a jar.

Ingredients

  • 50g coconut sugar
  • 50g melted coconut oil or butter/margarine
  • 3 tbsp tahini
  • 2 tbsp plant-based milk
  • 1 tsp vanilla essence
  • 180g oats (blitzed into flour)
  • ½ tsp baking powder
  • A pinch of salt
  • 50g chocolate chips
  • Serving suggestions: plant-based milk or yoghurt, fruit, melted chocolate, nut butter

Directions


1. Preheat the oven to 160Fan/180*C and line 2 large baking sheets with parchment paper.
2. Add all the ingredients to a bowl, apart from the chocolate chips, and stir together with a spoon. It may be dry so use your hands to bring it to a dough and then stir through the chocolate chips.
3. Divide the dough into roughly 40 pieces and roll each one into a small ball. Flatten slightly onto the lined trays.
4. Bake for 8-10 minutes until golden brown. Allow to cool fully on a wire rack before storing in an airtight container for 3-5 days.
5. To serve like in the images above, fill a bowl with warmed or fresh berries andsome plant-based yoghurt. Top with the mini cookies and a drizzle of melted chocolate.

Aww 😍 mini cookies are the best and never thought of having it for breakfast- but honestly I love berries and yoghurt sounds the Dream.
