Double Chocolate Banana Bread Donuts (Vegan GF)

Light and fluffy banana bread donuts studded with melting chocolate chips topped with a creamy dark chocolate ganache. These baked donuts are so easy to make, are moist and delicious plus they are naturally vegan and easily gluten-free.

I am a bit addicted to baking homemade donuts at the moment and am really enjoying experimenting with different flavours. From my summery Rhubarb and Lemon Donuts with Cream Cheese Frosting to my Vegan Oreo Donuts and a few recipes that I have up my sleeve, I love the cakey element to baked donuts rather than fried. These Double Chocolate Banana Bread Donuts truly are cakey – they are so light and fluffy! A fusion between banana bread and donuts, these chocolatey treats are the perfect balance and make a delicious and simple bake.

You only need a few basic ingredients and two bowls for this recipe. The wet ingredients involve plant-based milk and apple cider vinegar or lemon juice which curdles to help bind the mixture. Add some mashed banana for natural sweetness, some sunflower oil, coconut sugar and vanilla essence. In a second bowl, stir together the dry ingredients which are plain flour (GF blend if necessary), baking powder, bicarbonate of soda and that’s it! Stir it all together to form a lovely batter and fold through the chocolate chunks.

To make these Double Chocolate Banana Bread Donuts you will need a donut pan – I like my silicone mould one which makes it easier to pop them out when they are cooked. Just allow the donuts to cool fully before touching them as they can be quite delicate.

The second chocolate element of these Double Chocolate Banana Bread Donuts is the chocolate glaze and I was wowed by the shine! Stir together melted chocolate, coconut oil and maple syrup until shiny and sticky. Dip the cooled donuts into the glaze and sprinkle over some chopped nuts.

Light and fluffy banana bread donuts studded with melting chocolate chips topped with a creamy dark chocolate ganache. These baked donuts are so easy to make, are moist and delicious plus they are naturally vegan and easily gluten-free.

Ingredients

  • Donuts:
  • 90ml almond milk (or other plant-based milk)
  • 1 tsp apple cider vinegar or lemon juice
  • 150g ripe banana, mashed
  • 30ml (or 25g) sunflower oil
  • 30g coconut sugar
  • 1 tsp vanilla essence
  • 120g plain flour or GF plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 60g dark chocolate, chopped
  • Glaze:
  • 70g dark chocolate, chopped
  • 1 tbsp coconut oil
  • 1 tbsp maple syrup or honey
  • To decorate: chopped nuts or desiccated coconut

Directions


1. Preheat the oven to 160Fan/180*C and lightly grease a donut mould.
2. Stir together the milk and apple cider vinegar/lemon juice and leave to curdle for 5 minutes.
3. Whisk in the sunflower oil, mashed banana, sugar and vanilla essence.
4. In a second bowl stir together the flour, baking powder, bicarbonate of soda and a pinch of salt. Pour the wet over the dry mixture and stir until just combined. Fold in the chopped chocolate.
5. Divide between the donut holes, filling ¾ full. Bake for 10 minutes or until golden and risen. Allow to cool fully in the donut tray on a wire rack and then carefully remove from the mould.
6. Make the glaze by melting the chocolate and coconut oil in a heat-proof bowl over a pan of simmering water.
7. Dip the cooled donuts in the glaze and decorate with chopped nuts or desiccated coconut, if desired.
