Jammie Dodger (PB&J) Blondies (Vegan GF-Option)

Chewy, moreish and delicious blondies that are naturally vegan, grain-free and gluten-free with added Jammie Dodger biscuits on top. Packed with peanut butter and with jam swirls, they are the ultimate PB&J combination that comes together in one bowl in 30 minutes.

Peanut butter and jam (or jelly, depending where you are from) is one of the best and simplest combinations there are. The original sandwich is pretty delicious but there are so many ways to be creative and celebrate the delicious duo. This recipe for Jammie Dodger (PB&J) Blondies also celebrates my Jammie Dodger Peanut Butter aka PB&J peanut butter which sees creamy smooth homemade peanut butter studded with crunchy jammy bits of biscuit. I’ve used this peanut butter in this blondie recipe to really amplify with PB&J combination, but you can also use regular peanut butter.

The other ingredients that we need for these Jammie Dodger (PB&J) Blondies are simple and maybe surprising:

  • Chickpeas: these form the base of this grain-free and moist blondie recipe. Chickpeas are so versatile and they make such a fudgy and delicious texture without a strong taste.
  • Peanut butter: as mentioned above, use my Jammie Dodger Peanut Butter for the most indulgent tasting blondies but regular peanut butter also works. Choose the smooth and runny kind here.
  • Maple syrup: this adds a subtle sweetness and stickiness to the bars and adds to the rich and fudgy texture. You could use another sticky syrup, too.
  • Vanilla essence: for a lovely sweet vanilla flavour.
  • Baking powder: this adds a little bit of a rise to these blondies and keeps them light but really fudgy.
  • Salt: I am all about the salty and sweet combination and nothing does it better than adding a good pinch of salt to your sweet bakes.

Blend all of these ingredients together until really smooth and creamy (you don’t want any lurking chickpea pieces in there!) and then pour into a lined dish. The Jammie Dodger (PB&J) Blondies batter is thick, this is perfect. Dollop and swirl in some strawberry jam and top with some mini Jammie Dodgers – you could use the regular-sized ones, too – you may want to break them up. Look out for the GF biscuits if needed and check the ingredients as they are only recently “accidentally vegan” here in the UK. 

That’s all there is to these Jammie Dodger (PB&J) Blondies! Bake them until golden and crisp around the edges and then allow them to cool completely for the neatest slices. They are super fudgy and rich – it’s hard to believe there are any chickpeas hiding in the batter.

These are great served with a cup of tea in the afternoon or enjoyed on the go as a mid-morning snack. They are family and friend approved and are so easy to make. One bowl, one pan and one oven!

Ingredients

  • 1 tin chickpeas, drained (240g drained weight)
  • 150g peanut butter
  • 80g maple syrup maple
  • 1 tsp vanilla essence
  • ½ tsp baking powder
  • A pinch of salt
  • 30g strawberry jam
  • 9 mini Jammie Dodgers

Directions

  1. Preheat the oven to 160Fan/180*C and line a square pan (roughly 8-inch) with parchment paper.
  2. Add the chickpeas, peanut butter, syrup, vanilla, baking powder and salt to a blender and process until really smooth. Keep going until no lumps remain. Pour into the lined dish and smooth over the top.
  3. Add the jam on top in small spoonfuls and drag a knife through to make swirls. Now top with the mini Jammie Dodgers. Bake for 20-25 minutes until golden and crisp at the edges.
  4. Allow to cool fully before slicing into 9 squares.

  4. Hey Amy my great friend. Looks delicious 😋 and I so enjoy Jammie Dodgers and especially that because they are now vegan. Even though I am not vegan I so love new jammie dodgers. I not a fan on peanut butter probably the only one. What could I use instead on not using peanut butter? Splendid photography as always and definitely will save to my WordPress saved collection!
