Pumpkin Spice Latte Smoothie (Vegan GF)

A smooth and creamy, warmingly spiced smoothie inspired by the much-loved pumpkin spice latte. With pumpkin puree, coffee and spices, it makes a delicious plant-based, gluten-free, refined sugar free breakfast or snack.

Pumpkin season is well and truly underway, and I am so happy about it. I have been making so many pumpkin recipes recently โ€“ from sweet snacks to savoury meals and everything in between. So, I thought it was about time I bring you a drink and/or breakfast recipe to go with all the other pumpkin delights. This Pumpkin Spice Latte Smoothie is a spin on the classic latte that we all know and love with a few added ingredients for a breakfast-boost.

Before you get started, I realise that pumpkin puree isnโ€™t always the easiest ingredient to find and it seems even harder this year so there are a few alternatives:

  1. Make your own: roast your pumpkin in pieces with some olive oil until tender and then allow to cool before blending to a really smooth and creamy puree.
  2. Use butternut squash: any squash works just as well and roast your own as above.
  3. Swap the pumpkin for sweet potato: roast or steam sweet potatoes until tender and then mash with a fork. Itโ€™s so creamy and just as sweet.

As well as the pumpkin, we only need a handful of everyday ingredients for this smoothie:

  • Frozen banana: the classic for a creamy and thick smoothie base. Peel and freeze your bananas in smaller chunks the night before you want to make this smoothie. Itโ€™s great for using up bananas that are overripe or ones that never ripen.
  • Espresso/coffee: the ultimate for a true Pumpkin Pie Spice Latte! Use your favourite coffee or espresso powder/granules or a shot, too. If you want to use decaf, that is also great.
  • Almond butter: this adds a lovely nutty and creamy texture and slight taste to the smoothie that works so well with the spices. You could also use cashew butter or even tahini for a nut-free option.
  • Maple syrup: just a little bit here of a really special smoothie. You can use any runny syrup like agave, rice syrup or even honey (vegan where needed).
  • Almond milk: this is my favourite milk to use in smoothies but you can use any other plant-based milk like oat, soya, brown rice or coconut.
  • Spices: I use a simple and delicious blend of cinnamon, mixed spice and nutmeg. If you donโ€™t have one of these, play around using more of the others or add some ground ginger, too.ย ย If you have to pick just one, go with the mixed spice.

Blend all the ingredients for this Pumpkin Spice Latte Smoothie until super smooth and creamy and serve straight away. Like smoothie bowls, I donโ€™t think a smoothie is ever complete without a few toppings: I like to add thick coconut yoghurt, extra almond butter, a little bit more maple syrup, some pomegranate and some ground hemp seeds.

I hope youโ€™ll be sipping and slurping all day long and you can also add some vegan vanilla protein powder for a boost, too. This smoothie is so creamy and tastes almost just like a latte but less sweet and more wholesome. It is packed with nourishing ingredients, healthy fats, fruit, warming spices and makes for a speedy, plant-based healthy and seasonal smoothie. Enjoy this as part of a balanced breakfast or as a snack, too.

Ingredients

  • 80g pumpkin puree
  • 1 frozen banana
  • 1 shot espresso or 1 tsp espresso
  • 1 tbsp almond butter
  • 1/2 tsp maple syrup
  • 240ml almond milk
  • 1/2 tsp cinnamon
  • 1 pinch mixed spice
  • 1 pinch nutmeg
  • Optional: 1 portion vanilla protein powder
  • To serve: coconut yoghurt, extra almond butter, extra syrup, pomegranate, hemp seeds

Directions

  1. Add all the smoothie ingredients to a blender and blend until smooth, adding more milk if needed for a thinner smoothie.
  2. Serve with your desired toppings.

    I followed the recipe to the T but mine came out very liquid. So I ended up adding more pumpkin and frozen bananas. That threw off the rest of the flavors a bit. Are you all just drinking this with a straw? I was expecting a creamy texture to eat with a spoon

    • Sorry to hear it was a bit thin for you, however as it is in a cup with a straw, this is a drinkable smoothie. My ones to eat with a spoon are labelled as “smoothie bowls” – as the method states, you can add more or less liquid depending on your desired thickness so maybe next time use less and add more as you go? I hope you enjoyed the flavour!

        Yes absolutely! The flavor was great. The original flavor before i attempted to thicken it, was superb. After my attempt to thicken it I messed up some proportions but it was still delicious. I donโ€™t see where I can post a photo
