Sticky Cinnamon Apple Galette (Vegan)

A simple homemade dessert with a flaky sweet pastry and sticky cinnamon apples. Topped with some thick yoghurt, ice cream or custard, it makes a delicious vegan and wholesome dessert.

I love apple season and they are one of my favourite fruits to bake with, snack on or turn into breakfast recipes. To celebrate full-on cosy mode as the temperatures dip in the UK, I turned my attention to a galette. This style of free-form pastry tart is much easier and more rustic than a classic tart and pretty much anything goes. While this recipe calls for classic plain flour, check out the gluten-free pastry here which you could also use.

I made this during the first week of autumn (or Fall) and it was so warming, and the aromas instantly brightened my mood. It was also within the first few days of welcoming home our little kitten, Jessie, so she had a lot of fun trying to help out with this shoot!

Back to the pastry and this easy and classic dessert – it’s a great one to make for family and friends who aren’t plant-based as it’s such a comforting dish. It is delicious served warm with thick coconut yoghurt, extra cinnamon and syrup as I’ve done here, or eat it cold, too. It’s also great with ice cream, custard or just on its own.

The pastry for this Sticky Cinnamon Apple Galette is made from:

  • Plain flour: I haven’t tried this with a GF flour blend, but I’d be happy to hear your results. I also love using wholewheat or spelt flour, too.
  • Salt and coconut sugar: just a little bit of each to balance out the flavours. While this is a sweet pastry, it’s not overly sweet.
  • Vegan butter/margarine: I love using these for the buttery flavour they add to the pastry and the great texture. You could also coconut oil – simply rub the fat into the flour like the classic pastry you love.
  • Coconut yoghurt: this was a revelation for me! You could use another yogurt – the thicker the better. This adds some moistness to the pastry and gives it a lighter texture.

The yogurt and the water help to bring the pastry  together which needs a little rest in the fridge before rolling out. I like to use two sheets of parchment paper to avoid adding too much extra flour. Roll it out into a large oval and then fill the centre of the Sticky Cinnamon Apple Galette with the sticky cinnamon apple mixture, leaving a 2-cm gap around the edge. Fold this flap over the filling to create the crust/edge.

What’s in the sticky cinnamon apples?

  • Apples: use eating apples for a sweeter flavour here and I like to leave the skin on for the texture and colour.
  • Coconut sugar: this adds a subtle sweetness and I love the caramel-like flavour of coconut sugar although you could use brown or caster sugar.
  • Cinnamon: my favourite spice. This adds wonderful aromas and flavours that are very seasonal and comforting.
  • Cornstarch: this soaks up some of the juices to make sure the apples aren’t too wet to prevent the dough from cooking through evenly.
  • Lemon juice: this adds  a tang and moisture to the mixture which helps form the glaze.

Once the Sticky Cinnamon Apple Galette is ready, place it in the oven and allow to cook until golden and crisp, that’s it. I love to make this for family and friends when you want to serve a hearty and comforting dessert that just happens to be vegan and dairy-free.

It comes together in 15 minutes with cooling time before baking for about 35-40 minutes and is great straight from the oven or when cold.

Ingredients

    Pumpkin Pie Spice Overnight Oats (Vegan GF) For the pastry:
  • 300g (2 cups) plain flour
  • ½ tsp salt
  • 2 tbsp coconut sugar
  • 60g (¼ cup) vegan butter/margarine or coconut oil
  • 2 tbsp (35g) coconut yoghurt
  • 6 tbsp cold water
  • For the filling:
  • 2 apples, thinly sliced
  • 2 tbsp + 1 tsp coconut sugar
  • 2 tsp cinnamon
  • 1 tbsp cornstartch
  • 2 tbsp lemon juice
  • Plant-based milk, to brush
  • 1 tsp sugar, to dust

Directions

  1. Add the flour and salt to a large mixing bowl. Add the vegan butter/margarine and cut it into the flour using a knife. Now rub in with your hands to form a fine crumble. Stir in the coconut sugar.
  2. Stir in the yoghurt and cold water to bring the dough together. Tip out onto the surface and bring together to a ball with your hands. Cover in wrap and place in the fridge for 20-30 minutes.
  3. Preheat the oven to 160Fan/180*C.
  4. Prepare the filling: place the apples, 2 tbsp sugar, cinnamon, cornstarch and lemon juice to a small bowl and stir well. Leave to one side until ready to use.
  5. Place a large piece of parchment on the surface and place the pastry in the centre. Roll out between a second sheet of parchment into a thin oval about 0.5-1cm thick.
  6. Leaving a 2-cm gap around the edge, arrange the apple slices in the centre slightly overlapping one another (you may have extras) and fold over the edges. Brush the edges with some plant-based milk and sprinkle over the 1sp sugar. Bake on a flat baking sheet for 35-40 minutes until golden and crisp.
  7. Allow to cool slightly and serve warm or cold with vegan ice cream, custard or coconut yoghurt, extra cinnamon and syrup.
