Vegan S’Mores Cookies (GF-option)

Chewy cinnamon and vanilla cookies topped with chewy molten marshmallow and melted dark chocolate – the ultimate S’Mores in a cookie form. They’re easy and quick to make in one-bowl and are naturally vegan and can easily be gluten-free, too.

While S’Mores may not be a huge deal here in the UK, I am such a sucker for a toasted marshmallow and anything with melted chocolate, so they’re pretty ideal for me. Last year I turned the classic campfire treat into a crumble bar and this year it’s for the cookie version. Before the cookies, I do have one really amazing toasted S’Mores-by-the-campfire memory and that was at my friend’s wedding in 2019 (where I made the bride and groom this Vegan Vanilla Cake) where, for late night snacks, they provided guests with a huge campfire, sticks, oaty cookies, dark chocolate slabs and huge chewy marshmallows – all vegan, of course! We had so much fun making our own S’Mores that night and I brought a little bit of that into these cookies.

The base for these vegan S’Mores Cookies is the chewy cookie. It’s a simple one but a really tasty fail-proof cookie that I love. It’s buttery rich, sweet, chewy but sturdy, too. We need:

  • Vegan butter or margarine: any will work although I have not tried this with coconut oil, but I can imagine it would work.
  • Coconut sugar: I love the caramel like colour and texture of coconut sugar, but you could use golden caster sugar, regular caster or light brown sugar.
  • Agave or maple syrup: these are my two favourite sticky sweeteners to use but you could also try your favourites like brown rice syrup, golden syrup or honey (vegan).
  • Vanilla, cinnamon and salt: for flavour! I love the sweet vanilla and cinnamon notes that go so well with the salty tones.
  • Plain or GF plain flour: make sure your GF blend has xanthan gum in to help bind the cookies or use regular plain flour.  I also like these with spelt or wholemeal flour for a heartier, more wholesome taste.

That’s the cookie base done and made in one bowl, then you have to bake until crisp on the outside and just slightly chewy in the middle. Meanwhile, chop the marshmallows, melt the chocolate and preheat the grill as the next couple of steps only take few minutes to come together for these Vegan S’Mores Cookies.

  •  Top the cookies with a halved marshmallow and then grill for 2-3 minutes until they start to melt and slightly darken.
  • Drizzle with chocolate.

These Vegan S’Mores Cookies are so great eaten warm straight from the grill covered in warm melted chocolate, but they are also great cold if you leave them to set. To warm them back up, they need not even 10 seconds in the microwave or until the chocolate melt and the marshmallow puffs up!

I hope you will love these cookies as much as did – they’re a great way to enjoy the American S’Mores tradition without a bonfire and without the graham crackers. The cookies are golden and sweet with a chewy melty middle and a rich dark drizzle – I like to finish them off with a sprinkling of flaky salt to contrast all the sweetness.

They are naturally vegan and can be gluten-free if you use a GF blend or flour with some xanthan gum in to help bind them.

Chewy cinnamon and vanilla cookies topped with chewy molten marshmallow and melted dark chocolate – the ultimate S’Mores in a cookie form. They’re easy and quick to make in one-bowl and are naturally vegan and can easily be gluten-free, too.

Ingredients

  • 75g vegan butter or margarine
  • 70g coconut sugar
  • 60g agave or maple syrup
  • 1 tsp vanilla essence
  • 180g plain flour (GF or normal)
  • ½ tsp bicarbonate of soda
  • 1 tsp cinnamon
  • A pinch of salt
  • 5 large marshmallows, in half
  • 50g chocolate, melted
  • Salt, for sprinkling

Directions

  1. Preheat the oven to 160Fan/180*C and line a large baking tray with parchment paper.
  2. Add the butter/margarine to a mixing bowl with the sugar and stir/beat until smooth and light in colour. Stir in the syrup and vanilla essence.
  3. Pour in the flour, bicarbonate of soda, cinnamon and salt and stir to a smooth dough.
  4. Divide into 10 pieces, roll into balls and place on the tray, flattening them slightly. Bake for 13-14 minutes until golden and crisp.
  5. Meanwhile heat the grill to high. Remove the cookies from the oven and top each one with a marshmallow half, cut side up. Place under the grill for 2-3 minutes until melting and golden. Watch them closely so they don’t burn.
  6. Remove from the grill, place onto a wire rack and drizzle over the melted chocolate. Sprinkle over some salt.
