Mulled Wine Mince Pie Brownies (Vegan GF-Option)

Rich and fudgy chocolate brownies flavoured with warming mulled wine spices and topped with sweet sticky mincemeat, these brownies are naturally vegan, easy to make and have a gluten-free option, too.

It really is the most wonderful time of year for festive bakes and cakes and on top of ALL the gingerbread I have been making, sharing and eating, there has also been A LOT of chocolate – and I am not complaining! One of my favourite chocolate bakes this festive season has to be these Mulled Wine Mince Pie Brownies which I first shared on my Instagram at the start of December but I think they need to make another appearance.

What makes these Mulled Wine Mince Pie Brownies special?

  • They are super fudgy with rich, moist crumb and sticky topping
  • They are packed with festive mulled wine spices without any of the alcohol
  • They smell amazing as they bake and are even better when cooling on the kitchen countertop before slicing into the gooey goodness
  • They last for a few days and the tastes seems to get even better

For how amazing they are, they are also really easy to make! Plus, they are naturally vegan thanks to few “vegan swaps” like chia or flax seeds instead of eggs, dairy-free chocolate, and plant-based milk. Combine all the ingredients in one bowl, pour into a dish and bake until squidgy, slightly soft in the middle but crisping around the edges for the perfect brownie texture.

What goes into these tasty little Mulled Wine Mince Pie Brownies?

  • Chia or flaxseeds: I always grind my seeds at home to a flour or you can buy them “milled”. This results in a smoother gel and better consistency in the bake.
  • Dairy-free chocolate: I always go for dark chocolate as it’s my favourite, but any will do.
  • Vegan butter or margarine: melt this along with the chocolate for a smooth and creamy mixture to bind together all the dry mixture. There are so many great butters and spreads to choose from nowadays. I haven’t tried this with coconut oil, but I can imagine it works well.
  • Oat milk: I first made this recipe with a really yummy unsweetened oat drink, but you can use any plant-based milk here.
  • Orange: just the zest adds to the wonderful mulled wine flavours! It’s fresh, zingy and super festive.
  • Plain or GF plain flour: if using GF make sure to use a 1:1 GF blend with xantham gum in to help bind the mix. I also think spelt or wholemeal flour would work but the texture may be slightly less light.
  • Cacao powder: for extra chocolatey goodness. You can also use cocoa powder although I always opt for one without added sugars.
  • Caster or coconut sugar: use whichever you have to hand. Opt for coconut sugar if you’re choosing to make these refined sugar-free (and check your chocolate, too)
  • Bicarbonate of soda: just a little to bind the mix and help give the brownies a little rise.
  • Spices: cinnamon, ginger, mixed spice, nutmeg and clove all come together for a delicious festive and fragrant mulled wine flavour. If you don’t have all of them, the key spices are cinnamon and ginger!
  • Salt: I love adding this to bring out the sweet flavours:
  • Mincemeat: you can use store-bought or homemade although I always love to make my own. It’s so easy and made with only a few basic ingredients – here’s the recipe.

That’s all there is to these Mulled Wine Mince Pie Brownies – they are super fudgy and rich, packed with mulled wine flavours and it feels like eating a mince pie in brownie form. They are easy to make with a few ingredients in about half an hour. They are naturally vegan, rich with chocolate, easily gluten-free and nut-free, too.

Rich and fudgy chocolate brownies flavoured with warming mulled wine spices and topped with sweet sticky mincemeat, these brownies are naturally vegan, easy to make and have a gluten-free option, too.

Ingredients

  • 2 tbsp ground chia or flax seeds
  • 6 tbsp water
  • 100g + 50g dark chocolate, broken up
  • 90g vegan butter or margarine
  • 100ml oat milk or other plant-based milk
  • 1 orange, zested
  • 225g plain flour or GF plain flour
  • 50g cacao powder
  • 150g caster or coconut sugar
  • ¼ tsp bicarbonate of soda
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp mixed spice
  • A pinch of nutmeg
  • A pinch of ground clove
  • A pinch of salt
  • 100g mincemeat
  • Sprinkles, optional

Directions

  1. Preheat the oven to 160Fan/180*C and line an 8-inch square tin with parchment paper.
  2. Stir together the ground chia/flax seeds and water to form a gel, leave for 5 minutes.
  3. Melt 100g of the chocolate and vegan butter/margarine and warm up the oat milk slightly.
  4. Whisk together the flour, sugar, cacao powder, bicarbonate of soda, cinnamon, ginger, mixed spice, nutmeg, ground clove and a pinch of salt.
  5. Whisk the chia/flaxseed gel, oat milk and orange zest into the melted chocolate mixture. Now pour into the flour mix and stir to a thick batter. Fold in the 50g chocolate.
  6. Pour into the lined tin, smooth over the top and evenly spoon over the mincemeat, pressing down slightly. Bake for 22-25 minutes until firm around the edge and softer in the middle. They will continue to cook after you remove them.
  7. Cool in the tin for 10 minutes then remove and cool fully on a wire rack before slicing. Decorate with sprinkles, if desired.
