Salted Chocolate Almond Butter Fudge Cups (Vegan GF)

Thick, rich and luscious chocolate nut butter cups with a salted chocolate almond butter base topped with an almond butter fudge layer and extra chocolate. These cups are naturally vegan, gluten-free and require no-baking.

When I think of sweet recipes to make, my mind usually wanders down the chocolate path… and I’m not mad about it! Chocolate is something that I enjoy every day, and the better quality the chocolate, the more I enjoy it. I first made this recipe for The Nu Company who I’ve loved for a few years now – they’re fully plant-based and their bars are naturally lower in sugar. The best bit? They plant a tree for every bar sold and their packaging is fully home-compostable and plastic-free. They also taste amazing and these Salted Chocolate Almond Butter Fudge Cups were inspired by their Almond Sea Salt Chocolate Bar, that said, you can use any dark chocolate here.

The method for these Salted Chocolate Almond Butter Fudge Cups is really simple:

  • Make the base layer: melt together the chocolate, almond butter, coconut oil, maple syrup, vanilla and a pinch of salt in a pan until smooth.
  • Divide between cups: I always use silicone cups as you can re-use them time and time again and they hold their shape well. You can also use regular cupcake cases in a cupcake tray.
  • Allow to set: the chocolate layer needs to set before adding on the fudgy topping.
  • Make the topping: slightly warm the ingredients (almond butter, coconut oil, maple syrup, vanilla and salt) and whisk together until smooth.
  • Pour over the base layer: the layers will be thick, but it makes for the tastiest bite.
  • Top with chocolate and salt: and allow to set again until solid.

In just a few simple steps you have the most delicious and decadent treats ready to go. They’re great with a cup of tea or coffee as an afternoon snack or enjoy them after dinner for dessert. They literally melt in your mouth!

You’ll also notice the ingredients for the base and top layer of these Salted Chocolate Almond Butter Fudge Cups are almost identical:

  • Almond butter
  • Coconut oil
  • Maple or agave syrup
  • Vanilla essence
  • Salt 

The only difference is the base has chocolate in – but make sure to follow the separate quantities and methods as they differ between the two! For extra suggestions or swaps:

  • Almond butter – use another nut butter or tahini for a nut-free option.
  • Maple or agave syrup – any sticky syrup will work.
  • Chocolate – the salted almond one is great but use any dairy-free chocolate.

Ingredients

    Salted Chocolate Layer:
  • 150g salted almond dark or regular dark chocolate, broken up
  • 50g almond butter
  • 40g coconut oil
  • 1 tsp maple or agave syrup
  • 1 tsp vanilla essence
  • 1 pinch of salt
  • Almond Layer:
  • 150g runny almond butter
  • 40g coconut oil, softened
  • 2 tbsp maple or agave syrup
  • 1 tsp vanilla essence
  • 1 pinch of salt
  • Topping:
  • 30g salted almond dark or regular dark chocolate, chopped small

Directions

  1. Have 10 silicone muffin/cupcake moulds to have or 10 regular cupcake cases lining a cupcake tray.
  2. Add all the salted chocolate layer ingredients to a small saucepan and warm over a gentle heat until melted and smooth. Divide the chocolate mix between the cups and sit in the freezer for 30 minutes.
  3. Meanwhile, add all the almond layer ingredients to a mixing bowl and whisk until smooth and creamy. Warm in the microwave for 10-20 seconds if needed to warm it up.
  4. Remove the chocolate cups from the freezer, top with the almond layer mix and sprinkle over some chopped chocolate. Return to the freezer for 30-60 minutes or until set.
  5. Store in the fridge or freezer and enjoy straight away. The cups will keep for 1-2 weeks in the fridge and 1 month in the freezer.
