Protein Yoghurt Breakfast Toast 4 Ways (Vegan Gluten-Free)

Filling and wholesome sweet breakfast toasts with protein yoghurt and delicious toppings, these fun toast toppers are easy to make and are great for breakfast, brunch or as a snack. They take 5 minutes to make and use any topping ingredients you have to hand.

This “recipe” is so easy that it hardly can be called a recipe, but it’s something I have at least once a week and always gets a great reaction on my social media. So, I thought that I’d finally write down a proper recipe and method and take some photos to be able to add it to my breakfast and brunch recipes online. These Protein Yoghurt Breakfast Toast 4 Ways are highly versatile so if you don’t have the ingredients mentioned, you can change them to suit what you do have to hand.

Before we get to the ingredients, you may be thinking that yoghurt on toast is a little weird. And I do agree that it may sound strange, but once you’d tried it, you won’t go back (I hope). I love toast and I love yoghurt bowls for breakfast, so this is the best of both worlds for me. Imagine if you were to curate your favourite yoghurt, fruit, granola, nut butter bowl combination and then serve it on your favourite toasted bread… then you can picture what these Protein Yoghurt Breakfast Toast 4 Ways taste like.

This post highlights just 4 ways to serve these toasts using 2 different flavoured yoghurts:

  • Vegan yoghurt: my favourite to use is coconut as it’s really thought but any yoghurt like soya, almond etc will work here. The thickness of the yoghurt will affect how much milk you add.
  • Protein powder: this is where the thickness and flavour come from. I know that not everyone is a fan of protein powders, so I have included options below for vanilla essence and cacao powder to have the same flavours and textures, too. You can always skip this step entirely and use flavoured yogurts.   • Plant-based milk: anything you have open, this is to thin out the yoghurt mix, if needed, to reach a spreadable consistency.
  • Your favourite bread: nothing beats a good loaf of bread, so make sure you use your favourite here to make these Protein Yoghurt Breakfast Toast 4 Ways the tastiest they can be. I like rye or sourdough, but any will work.

That’s the base of these Protein Yoghurt Breakfast Toast 4 Ways and now we talk toppings aka the fun part! I love to add any number of fruits, granolas, nut butters etc and you can really go all out of keep it minimal depending on your mood. Pictured here are 4 ideas:

  • Raspberry jam and molasses: on vanilla protein yoghurt. You can use any jam and use syrup instead of molasses if you like. Also, some pomegranates are great on top.
  • Almond butter: on chocolate protein yoghurt. This is a real winner and so indulgent! I also add on some chia seeds for crunch.
  • Chocolate squares: on vanilla yoghurt. This is perhaps the most “indulgent” of them all and I also add on some cacao nibs. I love how the chocolate melts from the heat of the toast.
  • Strawberry and warmed blueberries: on chocolate protein yoghurt with pomegranate. Chocolate and berries are a great combination. Just slice the strawberries and warm the blueberries until they burst and are juicy.

Filling and wholesome sweet breakfast toasts with protein yoghurt and delicious toppings, these fun toast toppers are easy to make and are great for breakfast, brunch or as a snack. They take 5 minutes to make and use any topping ingredients you have to hand.

Ingredients

  • 200g vegan yoghurt e.g. coconut
  • 1/2 scoop vegan vanilla protein powder or 1 tsp vanilla essence
  • 1/2 scoop vegan chocolate protein powder or 1 tbsp cacao powder
  • 2-4 tbsp plant-based milk, as needed
  • Topping suggestions:
  • 2 tbsp raspberry or strawberry jam
  • 1 tsp molasses or syrup
  • 2 tbsp almond butter
  • 2 squares chocolate
  • 1 tsp cacao nibs
  • 2 strawberries, sliced
  • 100g blueberries, warmed
  • 1 tbsp pomegranate
  • 4-8 slices of bread, toasted

Directions

  1. Depending on the size of your bread, slice large ones in half and toast them.
  2. Divide the yoghurt equally between two bowls. Add the vanilla protein powder or vanilla essence to one bowl and the chocolate protein powder or cacao powder to the other bowl. Whisk/stir until smooth, adding plant-based milk as needed.
  3. Spread half of the toast with the vanilla yoghurt and the other half with the chocolate yoghurt. Top your toasts as desired, pictured here (top to bottom) are the berry jam and molasses on vanilla yoghurt, almond butter on chocolate yoghurt, chocolate squares and cacao nibs on vanilla yoghurt and strawberry, blueberry and pomegranate on chocolate yoghurt toasts. Eat straight away. Leftover yoghurt will keep in the fridge for 3-5 days.
  4. Notes: use gluten-free bread where needed.
