White Chocolate Biscoff Banana Bread (Vegan GF-Option)

A sweet and delicious banana bread layered with Biscoff cookie spread, crunchy Biscoff cookies and melting white chocolate all topped with a marble Biscoff cream cheese frosting and more Biscoff. This banana bread is vegan with gluten-free options and is easy but impressive.

Here it is, May’s banana bread: White Chocolate Biscoff Banana Bread. Every month throughout 2020 and now 2021, I work on and bring you a brand-new banana bread recipe and flavour and I have loved every recipe. This one may be a new favourite – I thought it may be a bit too sweet with all the Biscoff and white chocolate but actually it’s pretty perfect! Although it looks really impressive, it’s a really simple one. The banana bread batter comes together in one bowl while you make the frosting in 5 minutes and then all you need is a little more Biscoff and white chocolate to finish it off.

This banana bread is really one for the Biscoff lovers, which is pretty much everyone I know. I appreciate that standard Biscoff or Lotus/Speculoos cookies and spread are not gluten-free (such a shame) so I have included swaps to make this GF-friendly. 

How to make this gluten-free?

  • Use another biscuit: I love to use gingernuts or something similar for that warming flavour to the cookies.
  • Use another spread: instead of the Biscoff cookie spread, swap for almond, peanut or cashew butter or tahini for a nut-free option.
  • GF plain flour: this is a simple swap and just make sure you use one you trust and like as a 1:1 baking blend. In the UK, the Doves Farm Freee Foods one is really good.

Whether you are making this White Chocolate Biscoff Banana Bread gluten-free or as it is, I hope you will agree that it is a little bit special. The base for this recipe is really simple and I have a new hack for the smoothest textured banana bread:

  • Use a blender: add all the wet ingredients to a blender and process until smooth. This makes the batter much better and smoother but is not essential. If not…
  • Mash and stir well: make sure the wet mix is as smooth as possible.

Now onto the ingredients for this White Chocolate Biscoff Banana Bread. They are pretty standard banana bread ingredients (so hopefully you will have them all in the house already!) but they produce something magical:

  • Ripe bananas: the riper the better so make sure you leave some bananas to one side to turn nice and ripe. I always weigh my bananas as they vary in size so much.
  • Plant-based milk: any milk will do like oat, soya or almond.
  • Lemon juice: this curdles the milk to form a homemade buttermilk which binds the batter.
  • Ground chia/flax seed: this again helps bind the batter. If you only have whole chia or flax seeds, this is also fine.
  • Coconut or light brown sugar: this adds the lovely caramel-like colour and flavours to the banana bread. You could use white sugar if not.
  • Biscoff cookie spread: this adds such a great gooey texture and more “Biscoff” flavour to the wet mix. The warming cinnamon and spiced notes really work well. If you are gluten-free or don’t have the cookie spread, use a nut or seed butter as mentioned above.
  • Plain or GF plain flour: this keeps the batter really light and fluffy while holding together well with all the fillings and toppings.
  • Ground almonds: I love adding ground almonds to my bakes and cakes as it adds a great texture and sweeter nutty taste. If you are nut free, you could use extra plain flour or use ground seeds.
  • Baking powder and bicarbonate of soda: for the lovely rise.

Now for the fun bit! To the White Chocolate Biscoff Banana Bread batter, fold in the crushed cookies and white chocolate before tipping half into the lined tin. Add on some of the cookie butter/spread and then add on the rest of the batter. Top with extra Biscoff cookie spread, drag a knife through to create some swirls and then add on more crushed cookies and white chocolate chips, because more is more!

This White Chocolate Biscoff Banana Bread needs about 50 minutes of baking time and your kitchen will start to smell amazing. Warming cinnamon and sweet vanilla… then you have to wait until this loaf is fully cool before frosting, otherwise it will slip off and curdle.

Like any good cream cheese frosting, this one is made of a few simple ingredients:

  • Vegan butter: use butter rather than margarine spread for the best textured, flavoured and coloured frosting. I love the Naturli one but there are a few in the UK.
  • Vegan cream cheese: a really creamy one is best like the NUSH one in the UK, but any unflavoured/plain cream cheese will work.
  • Icing sugar: essential for all good frostings!
  • Plant-based milk: as before use whatever you have to hand to thin out the buttercream and make for the creamiest texture.

The magical part of this frosting is the Biscoff swirl, and this is really easy. Simply add the Biscoff cookie butter to the cream cheese frosting and just start to stir it in until you see swirl patterns then stop. Smother all over your cooled White Chocolate Biscoff Banana Bread and top with extra crushed cookies and white chocolate chips.

That’s all there is to it! This loaf is so impressive and is a great celebration cake to make for friends and family, too. The natural sweetness of the banana bread balances out really well with the sweeter cookies and white chocolate, it really is a delight to eat. I love it with a cup of tea in the afternoons, but it is also great for dessert (or anytime of day!).

Ingredients

    Banana Bread:
  • 3 medium ripe bananas (300g)
  • 80ml plant-based milk
  • 1 tbsp lemon juice
  • 2 tbsp ground chia or flaxseed
  • 40g coconut or light brown sugar
  • 100g Biscoff cookie spread (or another nut butter)
  • 210g plain or GF plain flour
  • 50g ground almonds
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • 60g Biscoff cookies, crushed (or another GF cookie)
  • 60g white chocolate chips
  • 60g Biscoff cookie spread (or another nut butter)
  • Biscoff Cream Cheese Frosting:
  • 50g vegan butter
  • 50g vegan cream cheese
  • 250g – 300g icing sugar
  • 1-2 tsp plant-based milk
  • 60g Biscoff cookie spread
  • Extra Biscoff cookies
  • Extra white chocolate

Directions

  1. Preheat the oven to 160Fan/180*C and line a loaf tin with parchment paper.
  2. Either add the banana, plant-based milk, lemon juice, ground chia/flax seed, sugar and cookie spread (or nut butter) to a blender and blend until really smooth then pour into a large mixing bowl. Or mash the bananas really well in a mixing bowl then whisk in the plant-based milk, lemon juice, ground chia/flax seed, sugar and cookie spread (or nut butter).
  3. Sift in the plain flour, baking powder and bicarbonate of soda and add in the ground almonds and a pinch of salt. Whisk to a thick, smooth batter.
  4. Fold in most of the crushed cookies and most of the white chocolate chips. Pour half of the batter into the tin and drop 30g of Biscoff cookie spread in spoonfuls over the top. Pour over the rest of the batter and spoon over the other 30g of Biscoff cookie spread. Drag a knife or spoon handle through the spread to make swirls then roughly smooth over the top.
  5. Sprinkle over the remaining crushed cookies and chocolate chips and bake for 50-55 minutes until an inserted skewer comes out clean.
  6. Cool for 10 minutes in the tin then remove and cool fully on a wire rack.
  7. Make the Biscoff cream cheese frosting by beating together the vegan butter and cream cheese until fluffy and smooth with an electric hand whisk or free-standing mixer. Now add gradually add in the icing sugar and plant-based milk until really fluffy and creamy, this will take a few minutes.
  8. Pour the frosting into a bowl and add in the Biscoff cookie spread and swirl though but do not mix in.
  9. Once the banana bread is cool, top with the Biscoff cream cheese frosting and then add on the extra crushed cookies and white chocolate. Store the frosted banana bread in an airtight container in the fridge if it is warm or at room temperature for 3-5 days or freeze the un-frosted banana bread for 1 month.
