Neapolitan Breakfast Oat Jars (Vegan GF)

The creamiest blended oat jars with a chocolate layer followed by a strawberry one all topped with a vanilla oat layer. These oats have a few simple, vegan and gluten-free ingredients to make for a 10-minute deliciously healthy breakfast.

I have a thing for blended oat jars, as seen here and here. They are just so creamy and combine my love for smoothie/smoothie bowls and overnight oats/porridge. The base for this recipe is the oats but the magic happens in the blender. Soaking them in boiling water and blending them with a few flavour-boosting ingredients (we shall talk Neapolitan later) and then layering them up. Serving them in jars seems fancier than in bowls, but they will taste just as delicious either way.

Now let’s talk Neapolitan! As summer is just round the corner (we hope) I have been thinking a lot about ice cream recently so I can only assume that is where the idea came from. You cannot deny that the rich chocolate, fruity berry and sweet vanilla are not the dreamiest combination and when turned into breakfast, it makes for a delicious start to the day.

Here’s how we make the regular oat base into Neapolitan magic:

  • Chocolate: chocolate yoghurt is they key my recipe, but you can also use plain yoghurt and cacao powder or even chocolate spread.
  • Berry: either raspberry or strawberry work the best and just add fresh (or frozen) berries to the blender.
  • Vanilla: I love to add vanilla protein powder to make it really thick and creamy but you could just use vanilla yoghurt or plain yoghurt and vanilla essence/extract.

These simple ingredients marry so well together and turn the oat base into something really special. As for the base, this is really easy to throw together.

  • Prepare three bowls
  • Add some oats to each bowl
  • Cover each with hot water
  • Add to the blender with 1/3 banana each
  • Blend each layer in turn

That’s all there is to it. You are only some oats, boiling water and banana away from these delicious Neapolitan Breakfast Oat Jars and about 10 minutes worth of prep time (5 of which are while the oats soak).

Why do we soak the oats in boiling water first?

There are a few reasons but mainly because it helps the oats to swell up as they would when you make porridge oats (make sure they are gluten-free where needed), making them really creamy. It also adds to some of the liquid needed to blend the oat layers, meaning you need little liquid at the next few stages.

Once ready, layer up all the layers into 2 jars, or bowls, and enjoy by scooping out a large spoonful to make sure you taste some of each layer in every mouthful! It’s the breakfast form of your favourite ice cream dessert.

You can make up a large batch of this recipe to serve more than 2 people/portions as they will keep well for 2-3 days in the fridge. Ingredients

    For the Base:
  • 120g oats (GF if needed)
  • 240ml boiling water
  • 1 banana
  • For the Vanilla Layer:
  • 1 tbsp plain yoghurt
  • 2 tbsp plant-based milk
  • 20g vanilla protein or 1/2 tsp vanilla essence
  • For the Berry Layer:
  • 1 tbsp plain yoghurt
  • 1-2 tbsp plant-based milk
  • 80g fresh raspberries/strawberries
  • For the Chocolate Layer:
  • 2 tbsp chocolate yoghurt (or plain)
  • 1-2 tbsp plant-based milk
  • 1 tsp cacao powder (use 2 tbsp if using plain yoghurt)
  • To serve:
  • extra yoghurt, fresh berries, vegan honey, cacao nibs and freeze-dried raspberries, melted chocolate

Directions

  1. Prepare your jars: place them in the fridge while you melt 40g chocolate. Drizzle the chocolate into the jars and then place back in the fridge.
  2. Divide the oats into 3 bowls of 40g each and pour over 80ml boiling water into each bowl. Sit for 5 minutes.
  3. For the Vanilla Layer: add 1 bowl of oats with 1/3 banana to a blender with the other ingredients and blend until smooth. Leave to one side. Add more milk as needed.
  4. For the Berry Layer: add 1 bowl of oats with 1/3 banana to a blender with the other ingredients and blend until smooth. Add more milk as needed.
  5. For the Chocolate Layer: add 1 bowl of oats with 1/3 banana to a blender with the other ingredients and blend until smooth. Add more milk as needed.
  6. Remove the glass jars from the fridge (or just use bowls) and layer up the oats: I started with the chocolate followed by the berry and then the vanilla layers. Top with some extra plain yoghurt, fresh berries and any other toppings you like. Eat straight away or store in the fridge for 2-3 days.
