Do you have a favourite childhood dessert? A fond memory I have is of ice cream sundaes and coke floats at an American-style restaurant – although I could never finish them. Needless to say, the taller and fancier the better. The same goes for self-serve ice cream stations where you paid per bowl and could go as crazy as you liked with the toppings…

This Cookie Dough Nice Cream Blizzard is inspired by those childhood memories of having an impressive and delicious dessert but one that won’t make your teeth fall out by just looking at it. This one packs everything you need for the tastiest blizzard dessert. This dessert/snack/breakfast is:

Now we know how amazing this Cookie Dough Nice Cream Blizzard is, how about we discuss what goes into it. You will find the full recipe and measurements below, but here are some tips on swaps, suggestions and what each ingredient is used for:

  • Cashew or almond butter: or you can use a seed butter like tahini or sunflower seed butter. I find that cashew or white almond butter lend the best “cookie” flavour to the cookie dough and the nice cream.
  • Maple syrup: just to add a dash of sweetness. You could also use agave syrup, vegan honey or another sticky syrup.
  • Vanilla essence: this adds the typical cookie flavour although you can skip this if you don’t have any.
  • Oat flour: or grind your own oats into a flour in a blender. This adds fibre and some wholegrains to the cookie dough and means they are safe to eat un-baked. Make sure the oats are gluten-free, where needed.
  • Chocolate: there are two types of chocolate, or you can use the same for both. As the cookie dough balls are small, chop the chocolate (or use chocolate chips) here and then roughly chop the chocolate for the nice cream blizzard as it gets blended up, anyway.
  • Bananas: these are for the nice cream part of this Cookie Dough Nice Cream Blizzard, and they turn so creamy and delicious when blended up. Freeze them in chunks the night before you want to make this. The riper bananas will also be naturally sweeter when you blend them.
  • Oat milk: this is my favourite for a cookie-like flavour, especially when using cashew butter, but any plant-based milk will do here. You can try almond, soya or coconut, for example.

The method is similarly simply, just add the cookie dough ingredients to a bowl and stir to a thick sticky mix. Roll into balls and chill in the fridge while you make the blizzard. This comes together in less than a minute by adding all the nice cream ingredients to a blender and blending until super smooth and creamy. Depending on the power of your blender, you may need more milk to get it going. Then return the chocolate chip cookie nice cream to the freezer to set a little before layering your Cookie Dough Nice Cream Blizzard jars!

Thick and creamy vanilla and chocolate chip nice cream layered with homemade no-bake cookie dough balls like your favourite childhood blizzard dessert. This version is naturally vegan, gluten-free, refined sugar free and healthful.

Ingredients

    For the Cookie dough:
  • 120g cashew or almond butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla essence
  • A pinch of salt
  • 75g oat flour
  • 50g chocolate chips
  • For the Nice cream:
  • 3 bananas, frozen
  • 120ml oat milk
  • 2 tbsp cashew or almond butter
  • 1 tsp vanilla essence
  • A pinch of salt
  • 30g dark chocolate, chopped
  • To serve:
  • extra chopped chocolate or cacao nibs

Directions

  1. Make the cookie dough balls: stir together the nut butter, maple syrup, vanilla, and salt until smooth. Now fold in the oat flour and chocolate chips to form a thick sticky dough. Divide into 14 pieces (about 20g each) and roll into balls. Place on a parchment lined tray and chill in the fridge.
  2. Make the nice cream: add the banana, oat milk, nut butter, vanilla, and salt to a blender and blend until creamy. Add in the chocolate and blend again. Transfer to a bowl and freeze for 20 minutes, if desired, to firm up.
  3. Break up some of the cookie dough and layer with the nice cream in 2 jars and finish with some whole cookie dough balls. Top with extra chocolate or cacao nibs, if desired. Best eaten straight away and cookie dough balls will last 1 week in the fridge.
