It is packed with crunchy and smooth textures, tangy and sweet flavours and so much goodness for just a handful of ingredients and only 5 minutes of your time.

Since working on this recipe, I find every excuse to spread, spoon or stir this Vegan Horseradish Sauce into so many dishes. Typically seen as a side condiment to main meals, this is so delicious stirred into the Chickpea Tuna Salad Sandwich filler and also stirred into creamy pasta dishes for a bit of heat and interest, spread into toasted sandwiches with melting cheese, added into hummus for a lovely, spiced flavour, added into tahini dressings and so much more.

  • Chickpeas: obviously! These are the base for this sandwich filler. Simply mash them with a fork until chunky. You could use another white bean too like cannellini or white beans, if needed.

Mash the chickpeas and then stir all the ingredients together for this Chickpea Tuna Salad Sandwich before assembling your sandwich. There are a few options when it comes to sandwiches: you can toast the bread first or leave it plain; you can have an open sandwich or close the sandwiches; you can add fresh tomatoes and lettuce, too. Whatever you decide, the essential part is to add an extra smear of Vegan Horseradish Sauce to the bread before adding the filling. Ingredients

    Chickpea Tuna Sandwich Filler
  • 1 tin chickpeas, drained (240g drained weight)
  • 1 gherkin, chopped
  • 1 tbsp capers, chopped
  • 1/2 red onion, chopped small
  • 1 small garlic, crushed
  • 1 handful fresh parsley, chopped
  • 2 tbsp vegan mayonnaise or yoghurt
  • 2 tbsp lemon juice
  • 1-2 tsp Sacla’ Vegan Horseradish Sauce, plus extra to spread
  • Salt and pepper
  • To serve:
  • 4 slices bread
  • Lettuce
  • Tomatoes, chopped

Directions

  1. Add the chickpeas to a bowl and mash with a fork, some lumps are ok.
  2. Add in all the other ingredients for the chickpea tuna in order and stir well until fully mixed.
  3. Spread each slice of bread with extra Vegan Horseradish and then top half of them with lettuce leaves. Spoon over the chickpea tuna filling and add some tomatoes. Sandwich together and serve.
  4. Eat straight away or leftover chickpea tuna sandwich filler will keep in a sealed container in the fridge for 2-3 days.
