Apple Streusel Parfait Jars (Vegan Gluten-Free)

These Apple Streusel Parfait Jars make a great breakfast, brunch or dessert as they have fruity cinnamon apples layered with a quick oaty streusel and thick dairy-free yoghurt. These jars are quick to make and are naturally vegan, gluten-free and healthy.

There is something so satisfying about streusel… it’s the buttery, oaty sweetness that does it for me. While I love baking streusels and streusel cakes, sometimes you want something a little lighter that comes together in time for breakfast, and these parfait jars are the answer.

What ingredients do we need for these Apple Streusel Parfait Jars?

These jars rely on three ingredients for the apple layer:

  • Apples: these are great in autumn and they taste so fresh and crisp. Any type of apple will be great, just not Bramley or cooking apples which will turn soft and mushy.
  • Coconut oil: to fry off the apples. I love the lighter taste and feel of using coconut oil but vegan butter or margarine will also work.
  • Cinnamon: this is key for the cinnamon flavoured sticky apples! You could also add a pinch of nutmeg, cardamom or ginger, too.

The streusel layer is also made up of simple wholefoods:

  • Oats: make sure these are gluten-free if needed. These have a delicious texture for using the streusel. You can also use buckwheat flakes or something similar.
  • Ground almonds: I love the nutty, sweet taste this adds to the streusel and they also have a great texture. To make these nut-free, you can use ground seeds or extra oats.
  • Coconut oil: to make the streusel crunchy as it cooks. As above, you can use vegan butter or margarine.
  • Maple syrup: this adds a stickiness to the streusel and makes it sweeter like they traditionally are. You can use another syrup like date, coconut or agave or use vegan honey.
  • Chopped dried fruits and nuts: I used a blend of cashew nuts, dried goldenberries and seeds but any mix will work. Make sure to chop them up to the same sizes. Use all seeds and dried fruits to keep these nut-free.

To make the streusel, add all the ingredients to a large frying pan or skillet and cook for about 10-15 minutes until smelling amazing and they’re nicely golden and crisp.

For the rest of the Apple Streusel Parfait Jars, we need:

  • Dairy-free yoghurt: you can use any yoghurt here, but I like a thick coconut yoghurt or almond yoghurt.
  • Extra fruits: as they are in season right now, I love adding some beautiful red currants on top, but any fruits will work, or you can leave the jars as they are.

For the method, you can make both the apples and the streusel at the same time on the hob/stove and then it is best to allow them to cool down slightly before serving them. To serve, grab 4 jars or bowls and alternate between the streusel, the apples and the yoghurt, finishing with some extra berries, if you like.

Can I make these Apple Streusel Parfait Jars nut-free?

Yes, swap the ground almonds in the streusel for ground seeds or use extra oats or oat flour. Then for the mix-ins, use only seeds and dried fruits rather than nuts.

Are these jars gluten-free?

These Apple Streusel Parfait Jars are naturally gluten-free, just make sure your oats are certified gluten-free.

Can I change the flavours?

I’ve used very seasonal flavours and fruits in terms of the apples and the cinnamon, but for something more summery, you can use fresh berries, stoned fruits and banana instead. Keep the streusel and the yoghurt the same. You could also use pears instead of the apples and cook them in the same way as below.

How long will these jars last?

Once assembled, these are best eaten straight away as the yoghurt will make the streusel less crunchy. But, you can make the apples and the streusel ahead of time and layer it all together just before serving. The apples will keep for 1-2 days in the fridge and the streusel will last 1-2 weeks in a sealed container at room temperature.

Ingredients

    For the apples:
  • 3 apples, cored and cubed
  • 1 tbsp coconut oil
  • 1 tsp cinnamon
  • For the streusel layer:
  • 100g oats
  • 50g ground almonds
  • 45g coconut oil, melted
  • 3 tbsp maple syrup
  • 100g dried fruits and nuts, chopped small
  • For the parfait jars:
  • 300g dairy-free thick yoghurt
  • Red currants, extra berries, maple syrup

Directions

  1. Prepare the cinnamon apples: add the coconut oil to a frying pan and then add the apples and cinnamon. Cook for 10 minutes over a medium heat until soft. Leave to cool.
  2. For the streusel layer: add the oats and ground almonds to a second frying pan and toast for 2 minutes. Now add the coconut oil and maple syrup and cook for 5-10 minutes until sticky and crisp. Remove from the heat and stir in the dried fruits and nuts. Allow to cool.
  3. To prepare the parfait jars: layer up the apples and streusel with the yoghurt, finishing with some streusel and apple. Serve with any extra toppings like red currants, berries and maple syrup.
  4. Best eaten fresh or prepare the components up to 2 days in advance and layer up just before serving. Store the apples in the fridge once cool in an airtight container for 1-2 days. Store the streusel in a sealed container for 1-2 weeks at room temperature.
