Easy Vegan Snickers Oats (Gluten-Free)

The ultimate breakfast and chocolate bar combination, these Easy Vegan Snickers Oats are deliciously rich and indulgent but health and wholesome. They are also gluten-free with nut-free options.

Breakfast food is one of my favourite foods and when I asked on social media what sort of recipes you are looking for, “breakfast” was one that proved quite popular, which makes me very happy. “Crackle shell” chocolate topped oats are having quite a moment right now, too, which led to me create these chocolate bar-inspired layered oat jars. Packed with the classic snickers flavours of creamy nougat, peanut butter, peanuts and chocolate they are easy to whip up for breakfast, brunch or even dessert.

What do these Easy Vegan Snickers Oats taste like?

These oats are so good, they are:

  • Creamy, thick and smooth
  • Packed with oats and chia seeds
  • Peanut buttery
  • Sweet but not too sweet
  • Crunchy from the peanuts
  • Chocolatey with a hard chocolate shell
  • Easy and quick to prepare in 10 minutes
  • Naturally vegan and gluten-free
  • Easily nut-free

What ingredients do I need for the oat jars?

The oats are made up with a few layers which rely on similar ingredients; the oat base, peanut caramel and the extra layers.

For the oats which form our nougat base:

  • Oats: rolled or quick soak oats work best here but other oats will also be fine. Make sure that the oats are certified gluten-free, where needed.
  • Boiling water: this allows the oats to quick become soft.
  • Ripe banana: or you can use applesauce if you prefer. This adds moisture and sweetness to the mix and makes it creamy.
  • Ground chia or flaxseed: these also thick the mix. I prefer ground chia seeds and grind my own at own. Simply buy whole chia seeds and blitz them in a blender into a fine meal.
  • Peanut butter: for the classic peanut butter nougat base. I prefer smooth and runny peanut butter. If you are making these nut or peanut-free, use another nut or seed butter.
  • Vanilla essence: this adds to the nougat sweet flavour.
  • Thick dairy-free yoghurt: this makes the oats really thick and creamy, and my favourite is coconut yoghurt.
  • Plant based milk: any carton of milk will work here like oat, almond or coconut.
  • Maple syrup: for sweetness. Other sticky sweeteners will work like agave or date syrup or vegan honey.

For the peanut caramel:

  • Peanut butter: as above.
  • Peanuts: to add some crunch, like the much-loved chocolate bar. Or use seeds or other nuts, depending on the nut/seed butter you are using.

For the rest of the layers:

  • Dark chocolate: this is for the magic chocolate shell and any chocolate will work.
  • Coconut oil: melt this with the chocolate to make the chocolate smoother and allows for a better “crack”.
  • Peanut butter: extra peanut butter to layer is essential!
  • Extra yogurt: I love to start the jars with a base layer of yoghurt.
  • Granola: to make these feel really like breakfast. You can use shop-bought or homemade granola.

How do I make these oat jars?

These are ready in less than 15 minutes and are so easy:

  • Soak the oats in boiling water: for 5 minutes as they swell up and absorb all the liquid.
  • Blend the soaked oats with all the other oat ingredients: until smooth.
  • Make the peanut caramel: stir the peanut butter and the peanuts together. Add some salt, if desired.
  • Layer the jars: spoon in some yoghurt and then granola.
  • Top with the blended oats: to almost the top.
  • Add on the peanut caramel: leaving a small space for the chocolate.
  • Melt the chocolate and coconut oil: and pour over the top. Add on some extra caramel, if desired.
  • Allow the magic shell to set: in the fridge.
  • Crack with a spoon: and enjoy.

Can I make these peanut-free and nut-free? Are they gluten-free?

Yes, these are easily peanut-free by using another nut butter like almond or cashew butter or to make these nut-free use seed butter like tahini or sunflower seed butter. Note that the flavours will change and they will no longer be Easy Vegan Snickers Oats but still delicious. Also change the peanuts for nuts or seeds, to match the nut/seed butter you use. The breakfast jars are naturally gluten-free, just make sure that your oats are certified gluten-free. Also check the ingredients in your milk, yoghurt and chocolate for hidden nuts and/or gluten.

How long will these last?

These jars are best eaten the same day they are layered up as they look the best. But, you can keep the blended oats in a sealed container in the fridge for 2-3 days and then layer up the jars as needed with the yoghurt, granola, caramel and chocolate shell.

Ingredients

    For the Oats:
  • 100g oats
  • 200ml boiling water
  • 1 ripe banana or 100g applesauce
  • 1 tbsp ground chia or flax seed
  • 2 heaped tbsp peanut butter
  • 1 tsp vanilla essence
  • 2 tbsp thick dairy-free yoghurt
  • 60ml plant-based milk
  • 2 tbsp maple syrup
  • For the Peanut Caramel:
  • 3-4 tbsp peanut butter
  • 25g peanuts, chopped
  • A pinch of salt, if desired
  • For the Jars:
  • 30g dark chocolate
  • 1 tsp coconut oil
  • 2-3 tbsp peanut butter
  • Extra yoghurt

Directions

  1. Add the oats and boiling water to a bowl and allow to soak for 5 minutes until all the water has been absorbed.
  2. Add the oat-water mix, banana, peanut butter, vanilla, yoghurt, milk and syrup to a blender and blend until smooth and creamy. Add more milk, if needed.
  3. Make the Peanut Caramel by stirring together the peanut butter and peanuts.
  4. Have 2 or 3 jars ready and add 1 tbsp of peanut butter to the base and top with some granola. Add on a few spoons of yoghurt and then top with the Snickers Blended Oats mix.
  5. Divide the peanut caramel between the jars. Pop the jars in the fridge while you melt the chocolate and coconut oil together.
  6. Remove the jars from the fridge and pour over the chocolate. Top with extra granola or some fruit, as desired. Allow the chocolate shell to set and dig in.
  7. It is best to assemble the jars on the day or eating, but the oats will keep in a sealed container in the fridge for 2-3 days.
