Below are some of my favourites, including Raw Salads, Buddha Bowls and Warming Stews. Buon appetito!

Tomato Spiced Sweet Potato Smash Tomato Spiced Sweet Potato Smash - There is one simple inspiration behind this meal: something I can eat easily that is soft on my teeth. A few days into my Invisalign teeth straightening journey, I was in quite a bit of pain and struggled to bite foods. I had never experience sensitive teeth before, nor dental work at all so it … Continue reading Tomato Spiced Sweet Potato Smash
Noodles and Coodles with Spicy Almond Satay Noodles and Coodles with Spicy Almond Satay - What’s a coodle I hear you ask? Well, we’ve had zoodles or courgetti, so what to call a carrot noodle? A coodle, of course! I thought it was obvious anyway. This recipe makes the most of gorgeous carrot spirals without scrimping on those all important carbohydrates that make this a beautifully balanced meal. I chose … Continue reading Noodles and Coodles with Spicy Almond Satay
Pistachio and Date Quinoa with Roasted Cauliflower Pistachio and Date Quinoa with Roasted Cauliflower - I have to admit, while cauliflowers may not be in season right now, I am still loving them and buying them quite frequently. I do try to eat seasonally as often as possible (bring me ALL the summer strawberries) but sometimes when a craving kicks in, you cannot ignore it. And surely there are worse … Continue reading Pistachio and Date Quinoa with Roasted Cauliflower

You may know I love … Continue reading Spicy Thai Style Tofu Balls with Spicy Tomato Sauce and Miso Caramelised Onions
Egyptian Spiced Courgette and Butter Beans with Turmeric Dukkha Egyptian Spiced Courgette and Butter Beans with Turmeric Dukkha - Every country has its own cuisine, and what I love most about getting to know a new country is getting to know its cultural dishes and ingredients. I’ve never been to Egypt but I definitely want to go at some point, although I must admit the inspiration for this recipe came from the abundance of … Continue reading Egyptian Spiced Courgette and Butter Beans with Turmeric Dukkha
Butternut Squash Mac n Cheezey Greens with Cheezey Hemp Sprinkle Butternut Squash Mac n Cheezey Greens with Cheezey Hemp Sprinkle - I’ve called this a variation on Mac n Cheese, but my comforting pasta dish is a far cry from the butter and cheese laden dish. Over the years, I have tried, tasted and read about numerous cheese-free cheese sauces. The initial ones I made weren’t too spectacular, but it only made me more determined to … Continue reading Butternut Squash Mac n Cheezey Greens with Cheezey Hemp Sprinkle

Lightly Spiced Black Eyed Bean and Quinoa Stew Lightly Spiced Quinoa and Black-Eyed Bean Stew - It may be summer, but here in England, the cold and grey days are still around and there are times when the sun never seems to have his hat on. Paprika Baked Bean Tacos with Easy Fluffy Flatbread Paprika Baked Bean Tacos - Who doesn’t love Mexican food? I am a huge fan and love experimenting with different flavours, combinations and different styles of Mexican cuisine. I’ve got my Mexican Feast Buddha Bowl recipe, but I also love fajitas, burritos and simple Mexican fried veggies with guac. What could be better? Smokey spiced vegetables and beans, served with … Continue reading Paprika Baked Bean Tacos
Easy Fluffy Flatbread with Hummus and Avocado Easy Fluffy Flatbread - What isn’t to love about a flatbread? Sturdy enough to hold your favourite fillings, but not quite as stodgy as some bread. They’re the perfect sandwich alternative. But that’s not it. I also enjoy these flatbread instead of tortilla wraps and pittas, or alongside crudités and hummus, the possibilities are endless. As well as being … Continue reading Easy Fluffy Flatbread
Bacon Bits Tempeh Kale & Lentil Salad w/ a Creamy Turmeric dressing Bacon Bits Tempeh Kale & Lentil Salad w/ a Creamy Turmeric dressing - 2018 has been the year I fell in love with Tempeh. Truly, madly, deeply. On my journey to veganism, I travelled through a ‘raw diet’ stage, a ‘superfood healthy’ stage and a focus on consuming next to no ‘processed foods’. Now, while I still incorporate all factors into my day to day eating, I have … Continue reading Bacon Bits Tempeh Kale & Lentil Salad w/ a Creamy Turmeric dressing
Coconut Rice w/ Greens and Spicy Sesame Sauce Coconut Rice w/ Greens and Spicy Sesame Sauce - Welcome to my new favourite way to cook rice. There’s no fancy techniques involved, no expensive equipment just some plain old white rice and coconut milk. Now, I may well be late to the coconut rice game, but I’ve always found the options on restaurant menus of ‘sticky coconut rice’ less than appealing. I always … Continue reading Coconut Rice w/ Greens and Spicy Sesame Sauce
Ratatouille Stuffed Butternut Squash w/ a Mediterranean Quinoa Salad - It’s the fourth and final post in my Butternut Squash Series and I am excited to share this last one with you. This meal was actually a spur of the moment dish, as I wasn’t ‘feeling’ my original stuffed squash recipe, so although it may seem like a bit of a random combination, it works … Continue reading Ratatouille Stuffed Butternut Squash w/ a Mediterranean Quinoa Salad
Smokey Butternut Squash, Maple-Balsamic Sprouts and Quinoa Bowl - My love for butternut squash is strong, as you will have noticed, this being my third post in the Butternut Squash Series. This may be my favourite of the meals so far, but there’s still one more post to go so the jury is still out. While I am again roasting chunks of squash today, … Continue reading Smokey Butternut Squash, Maple-Balsamic Sprouts and Quinoa Bowl
Butternut Squash Macro Power Bowl - Did you roast some extra butternut squash while making my Roasted Squash and Kale Slaw Salad w/ Buckwheat and Lemon Miso Dressing? If not, then do not fear, this is still a simple recipe that delivers on big flavours…. … Continue reading Butternut Squash Macro Power Bowl
Roasted Squash and Kale Slaw Salad w/ Buckwheat and Lemon Miso Dressing - When you’re cooking for one, you either become incredibly bored with eating the same thing on repeat, or you become inventive with how to use leftovers. Or better yet, how to meal prep and plan in advance when you’ll use that other ¼ of a butternut squash. I have become the latter. I love being … Continue reading Roasted Squash and Kale Slaw Salad w/ Buckwheat and Lemon Miso Dressing
Tamari roasted Cauliflower and Pear Wild Rice Salad - This is one of those unusual salad combinations that will play on your mind for a while until you make it. So then you’ll dream about the pears with tamari again until you just … Continue reading Tamari roasted Cauliflower and Pear Wild Rice Salad
Roasted Roots Lentil Quinoa Salad w/ Mustard-Coconut Vinaigrette - I first dreamt of this recipe at a time where it was meteorically spring yet the cold winter weather persisted, which sounds like England all over. My body didn’t know what it wanted to eat. Was I to celebrate the arrival of spring with lighter, fresher dishes or still cling to the warming, comforting nature … Continue reading Roasted Roots Lentil Quinoa Salad w/ Mustard-Coconut Vinaigrette
Egg-less Egg-Mayo - Sounds like an oxymoron doesn’t it? But no, after all the ‘cheese-free’ cheeses, the ‘milk-free’ milks and the chilli-non-carnes, there is another vegan saviour to take centre stage: vegan egg-mayonnaise. I’ve never been a fan of egg-mayo sandwiches. As a child, the thought of boiled eggs, mashed up with mayonnaise repulsed me and the smell?! … Continue reading Egg-less Egg-Mayo
Rainbow Sushi bowl with Apricot Kernel Satay Sauce - Sashimi rollin’ they hatin’…. Another food-based pun. I do apologise, but that won’t stop me! I’m only just getting started. On this sushi note, who doesn’t love a good nori roll? Well, my family to start with. They have never been fans, so this is something I have had to enjoy by myself or with … Continue reading Rainbow Sushi bowl with Apricot Kernel Satay Sauce
