Sticky, raw and delicious granola bars that are quick and easy to make and packed with good-for-you ingredients. These snack bars are naturally vegan, gluten-free and contain only 9 simple ingredients and take 10 minutes to make.
There is nothing better than a delicious snack bar when the 4pm slump hits – or for elevenses, or any time of day for that matter. I always make sure to have snacks with me when I am out and about or when I am travelling. There are so many amazing brands out there whose bars and snacks I love, but I much prefer something homemade.
These Date Cashew and Coconut Granola Bars tick all the boxes when you’re looking for a delicious, healthy, vegan and gluten-free snack that genuinely fills you up. They are only made from 9 ingredients which are easy to find, and everything comes together in a blender. The base is blitzed cashew nuts, oats and coconut flakes held together with a sticky mixture of jammy dates, cashew butter and maple syrup. This mixture is naturally sweet, and the pinch of salt and vanilla essence brings it all together. Blend until sticky, press down into a tin and wait for the bars to set. This is the hardest part about raw baking!
Slice the mixture into bars and drizzle with your favourite melted chocolate for an easy and impressive treat.
Feel free to play around with the type of nuts used in these Date Cashew and Coconut Granola Bars – swap the cashew butter and nuts for almond butter and almonds, or peanuts, hazelnuts… they all would be delicious!
As well as a delicious snack, these Date Cashew and Coconut Granola Bars are also a great option to serve to friends and family with a cup of tea, or even as part of a quick grab and go breakfast mid-week. Make up a batch at the weekend and enjoy throughout the week!

Hi Amy- I have recently discovered your website and I am so glad I did! I have already made the Roasted peanut granola bars which are so good! I can’t wait to try these but I just wanted to ask is it ok do you think to use desiccated coconut instead of the coconut flakes? Thank you! Paula
