These Chocolate Peanut Butter Banana Weetabix Bites are made with just 4 ingredients and are ready in less than 10 minutes, making them an ideal vegan and easily gluten-free snack.
I am back with another Weetabix recipe, this time using the delicious minis. These used to be my favourite growing up (they come in fruit and nut and original flavour) as they’re just like Weetabix but smaller, crunchier and so delicious. You can have them in a bowl with plant-based milk, or, if you want to take them to the next level you can make these easy 4-ingredients bites. They are so quick and easy to make, are great for on-the-go or sat with a cup of tea and are packed with goodness.

What ingredients do I need?
We just need 4 ingredients (plus an optional 5th one):
Weetabix minis: I use the chocolate chip ones as they are so good but the fruit and nut or the original ones will work. Use gluten-free Weetabix-style bites where needed or rice cakes, for example.
Peanut butter: I love using a runny and smooth peanut butter here like Manilife, but other types are great. You can also use almond butter or choose tahini to keep these nut-free. Try to use 100% nuts/seeds or one with only salt added
Banana: slice the banana into rounds to go on top.
Dark chocolate: use your favourite dark or dairy-free milk chocolate to drizzle on top.
Peanuts: I add some chopped peanuts on top for crunch but these are totally optional and you can also swap these for coconut or cacao nibs to make these nut-free.
To make the bites gluten-free, use gluten-free Weetabix-style cereal or small rice cakes, for example. Swap the peanut butter and peanuts for seed butter and seeds/cacao nibs to make them nut-free.
How do I make them?
These are easy and quick to make:
Pair up the Weetabix minis: this makes each bite the right size.
Spread with peanut butter: to help join them together.
Top with a banana: it should cover both minis. Now chill in the fridge.
Melt the chocolate and drizzle over: as much or as little as you like.
Sprinkle with peanuts: if you like and then enjoy.
How long will they last?
You can keep these Weetabix bites in the fridge in a sealed container for 2-3 days although best eaten fresh.

Ingredients
24 Weetabix Minis Chocolate Chip
6 tsp runny, smooth peanut butter
1 banana, sliced into 12
30g dark chocolate
Crushed peanuts, if desired
Instructions
For the bites: arrange the Weetabix Minis in pairs and spread each pair with ½ tsp peanut butter. Top with 1 banana slice, place on a plate and chill in the fridge for 15 minutes.
For the topping: melt the chocolate. Remove the bites from the fridge and drizzle or spoon the chocolate over each Weetabix bite. Sprinkle with crushed peanuts, if desired.
To eat: enjoy straight away, on the go or keep in the fridge for 2-3 days in a sealed container.
