Chocolate Chip Strawberry Cookie Dough Bites (Vegan High-Protein)

These Chocolate Chip Strawberry Cookie Dough Bites are fudgy, delicious and packed with protein. With a chocolate top and base, they are the perfect chocolate strawberry snack that is vegan, gluten-free and healthy.

What ingredients do I need?

The ingredients for these are simple and wholesome. You can see my favourite brands and products below and here’s an explanation as to why we need each one:

  • Dark chocolate: use your favourite chocolate for melting down to make the bites as well as chocolate chips for the cookie dough. You can also use a dairy-free milk chocolate, too.
  • Freeze dried strawberry: this is the magic ingredient that makes these taste so much like real strawberries. Freeze-dried strawberry powder should be 100% strawberries so it’s no wonder it tastes amazing. I get mine online or you can find it in health food stores, either in flakes, bits of strawberry or powder form.
  • Smooth runny peanut butter: I love peanut butter, strawberries and chocolate together but you can also use tahini for a nut-free option or swap this for cashew or almond butter, too.
  • Maple syrup: this is great for a sticky sweetness and you can also use agave syrup or your preferred syrup.
  • Coconut yoghurt: I love adding Cocos Organic yoghurt to no-bake recipes as it adds a fudgy texture as well as adding healthy fats and gut healthy ingredients. Make sure your yoghurt is thick and creamy.
  • Coconut oil: add this into the chocolate to make a shinier top and base and one that will set more quickly.
  • Oat flour: this is great for no-bake recipes as it’s safe to eat raw. Make sure your oats are gluten-free, where needed and make your own oat flour by blending oats into a flour in a blender.
  • Coconut flour: this absorbs so much moisture and is great for no-bake cookie dough recipes as it adds a fudgy texture. If needed, swap this for more oat flour, although you may need to add 1-2 tbsp more oat flour.
  • Vegan vanilla protein powder: this adds tons of protein as well as sweetness and a natural vanilla flavour. I use the protein powder from Macromike and you can save 10% off everything with my code AMB-AMY.
  • Tremella mushroom powder: this is totally optional but I love adding some sort of wholesome superfood to my recipes. The tremella mushroom is known for it’s beauty properties, making it great for youthful skin, hair and nails.

How do I make them?

These are so easy to make and ready in a few steps:

  • Melt the chocolate and coconut oil: and pour into an ice cube tray (mine is similar to this one). Allow to set.
  • Stir together all the ingredients for the cookie dough: and roll into balls.
  • Press a cookie dough ball into each ice cube section: on top of the chocolate.
  • Cover with the remaining melted chocolate: and allow set.
  • Pop our of the ice cube tray and enjoy: straight away or keep them for later.

Are they gluten-free and nut-free?

Yes these are gluten-free, just check your oats or oat flour. To make these nut-free, swap the peanut butter for tahini or sunflower seed butter and check your other ingredients (like chocolate and protein powder).

How long will these last?

These bites are great to make ahead as they keep for 1 week in a sealed container in the fridge and will keep for 1 month in the freezer, wrapped well. Allow to defrost before eating.

These Chocolate Chip Strawberry Cookie Dough Bites are fudgy, delicious and packed with protein. With a chocolate top and base, they are the perfect chocolate strawberry snack that is vegan, gluten-free and healthy.

Ingredients

For the Chocolate:

  • 180g dark chocolate, chopped small
  • 2 tbsp coconut oil
  • Freeze-dried strawberries
  • Flaky salt

For the Cookie Dough:

  • 80g smooth, runny peanut butter
  • 60ml (4 tbsp) maple syrup
  • 60g thick coconut yoghurt
  • 50g oat flour
  • 30g coconut flour
  • 25g vegan vanilla protein powder
  • 2 tbsp freeze-dried strawberry powder
  • 1 tsp tremella mushroom powder, optional
  • 40g dark chocolate chips

Instructions

  1. Melt together the chocolate and coconut oil. Either in a bowl over a pan of simmering water or in the microwave.
  2. Pour half of the chocolate into the bases of 15 ice cube wholes (in a small tray) or into a lined 6-inch square tin. Transfer to the fridge to set.
  3. For the cookie dough: stir together the peanut butter, syrup and yoghurt till smooth. Add in the oat flour, coconut flour, protein powder, strawberry powder and mushroom powder. Stir to a sticky cookie dough and fold in the chocolate chips.
  4. If using an ice cube tray: divide the cookie dough into 15 small pieces and press into the ice cube holes. Or, if using a square tin, press all the cookie dough into the tin and smooth over the tops.
  5. Now pour the remaining melted chocolate: over the ice cube trays or the tin to cover the cookie dough. Transfer to the fridge for 1 hour, or until set.
  6. To serve: pop the chocolate bites out of the ice cube trays or lift out the tin. Use a warmed, sharp knife to slice the cookie dough slab into 12-15 squares.
  7. If you like: drizzle the bites with extra chocolate and decorate with freeze-dried strawberry pieces and flaky salt.
  8. To eat and store: enjoy straight away or keep in a sealed container in the fridge for 1 week or in the freezer for 1 month. Allow to defrost before eating.
