Here I share my favourite vegan recipes that are not only delicious, but they are vibrant, wholesome and designed to nourish you from the inside out with vegan and vegan curious followers.
These Healthy Chocolate Chip Cookie Dough Balls are fudgy, smooth and packed with chocolate chips while being made from good-for-you ingredients. Plus, they are vegan, gluten-free and high in protein.
I love edible cookie dough although so many recipes use lots of butter and sugar, whereas this wholefood plant-based recipe focuses on healthful ingredients that are going to give you a natural boost of energy. They also boast lots of fibre, protein, healthy fats and so many chocolate chips, which is very important when it comes to sweets. These were the inspiration for my latest banana bread recipe (coming in a couple of day’s time) as it’s so perfect for a family-friendly bake.

What ingredients do I need?
This recipe relies on a few cupboard staples and you can see my favourites in the “shop the recipe” section, too.
For the cookie dough:
Runny smooth cashew butter: this naturally tastes like cookie dough as cashews are sweet, cookie-like and nutty. You can also swap this for almond, peanut or walnut butter or opt for tahini or sunflower seed butter to make this recipe nut-free.
Maple syrup: for the sweetness that we love from cookie dough, but making them refined sugar-free. I also love agave syrup or try vegan honey.
Vanilla and salt: for flavour.
Oat flour: blend your oats into a flour at home to make these high in fibre and easily gluten-free (just check your oats are certified free from gluten). It also means this recipe is safe to eat uncooked (other flours will require cooking first).
Ground almonds: I love the texture and nuttiness these add to the mixture although you can use all oat flour if making these nut-free.
Vegan protein powder: I love to use the Macromike salted caramel peanut brittle or cookie dough flavoured protein here or the vanilla buttercream, but use your favourite one. My code AMB-AMY saves you 10% of everything.
Dark chocolate chips: as cookie dough is sweet I love to use dark chocolate but you can use any dairy-free chocolate. If you don’t have chips, use buttons or chop up a bar into small pieces.
Yes these balls are gluten-free, just check that your oat flour/oats are certified gluten-free. To make these nut-free, swap the cashew butter for tahini or sunflower seed butter and swap the ground almonds for more oat flour.
How do I make this?
These are easy to make:
Whisk together the wet ingredients: until smooth.
Add in the dry ingredients: and stir to a sticky mix.
Fold in the chocolate chips: and shape into balls.
These cookie dough balls will keep for 1 week in a sealed container in the fridge or up to 1 month in the freezer. Allow to rest for 1-2 hours before eating them.
Do I have to make balls?
No, you can shape this cookie dough into bars, cups or scoop it into small bowls and enjoy with a spoon.

Ingredients
120g smooth, runny cashew butter
60ml maple syrup
½ tsp vanilla essence
70g oat flour
40g ground almonds
20g vegan protein powder, or more ground almonds
A pinch of salt
60g dark chocolate chips
Instructions
For the cookie dough: stir together the cashew butter, syrup and vanilla till smooth. Add in the oat flour, ground almonds, protein powder and salt and stir to a sticky mix (it may seem dry at first but keep attiring, or add 1 tbsp more cashew butter). Fold in the chocolate chips.
Use a spoon to scoop the dough and roll into balls (regular sized balls are about 25g, but you can make them smaller or larger).
Eat straight away or keep in a sealed container for up to 1 week. You can also freeze them for 1 month and allow to defrost for 1-2 hours before eating.
