What ingredients do I need?
The ingredient list is simple and you can see my favourites in the “shop the recipe” section below.
For the brownie base:
Oat flour: or you can use oats and blend them yourself in a blender to resemble a flour. I do not recommend swapping this for any other flour as the base is un-baked. Make sure the oats/oat flour are gluten-free, where needed.
Cacao powder: to make this mixture chocolatey, we use raw cacao powder. Or you can use 100% cocoa powder, too.
Smooth peanut butter: to add the peanut butter flavour as well as to bind the base together. Make sure the peanut butter is 100% peanuts (with some salt, if you like) and it’s smooth and runny.
Maple syrup: this makes the base naturally sweet like a brownie and you can use agave syrup or another sticky syrup you like.
As for the FroYo filling:
Crunchy peanut butter: I like to add some texture into these cups so adding crunchy peanut butter into the bases tastes and feels so good. If you don’t have any, you can use more smooth nut butter.
Banana: adding banana slices to the cups is so delicious and tastes like Nutella and banana together, which is so dreamy. If you don’t like banana, you can use a slice of strawberry in each cup, too.
Thick coconut yoghurt: this is for the frozen-yoghurt part (aka FroYo) and make sure it’s thick, creamy and only contains the best ingredients for the tastiest and most wholesome cups. I use the Cocos Organic natural or vanilla yoghurt.
Peanut butter and maple syrup: as above. These are stirred into the creamy filling to make it so dreamy.
Dark chocolate: use your favourite chocolate to add onto these bites, I like a minimum 70% dark chocolate but any dairy-free chocolate will be great.
Coconut oil: this is for the chocolate topping and is optional. I like to add it as it makes the top set slightly softer so it won’t crack as easily and also for the shine.
Peanut butter: for swirling on top.
Dark chocolate bananas: these are from Natures Heart and they are delicious. Dried banana pieces tossed in dark chocolate and cacao powder – perfect for adding on top of these bites and they inspired this recipe. If you don’t have any, you can use anything on top like chocolate raisins or peanuts or leave them plain.
Are these gluten-free and nut-free?
These are naturally gluten-free, as long as your oats are certified gluten-free. To make these nut-free, swap the peanut butter for tahini or sunflower seed butter throughout the recipe and check your chocolate and yoghurt for hidden nuts. If avoiding peanuts, swap the peanut butter for another nut butter like almond or cashew.
Stir together the brownie ingredients: and press into cupcake or muffin holes for the bases.
Chill in the fridge: which allows them to hold their shape.
Whisk together the FroYo ingredients: until smooth.
Fill the cups with peanut butter, banana and the FroYo filling: to the top of the cup case.
Chill in the fridge or freezer: until firm to touch.
Melt the chocolate and coconut oil and pour over the cups: swirling on the peanut butter.
Top with the dark chocolate bananas: and set in the fridge or freezer again.
How long will they last?
These will keep for 1 week in a sealed container in the fridge or 1 month, wrapped well, in the freezer. Allow to thaw for 20 minutes or so, before eating from the freezer.
