Strawberry Matcha Latte Overnight Oats (Vegan High-Protein)

These Strawberry Matcha Latte Overnight Oats are creamy, thick and delicious made with real strawberries and ceremonial grade matcha green tea powder. These oats are the perfect breakfast spin on the viral latte.

I love anything to do with oats, matcha lattes and strawberries in the summer so I wanted to re-create the much-loved strawberry matcha latte in breakfast form. Like the drink, it has a strawberry base topped with lots of creamy matcha and with some whipped coconut cream to finish it off. The key to creating thick and creamy oats here is thick coconut yoghurt, evaporated coconut milk and also sweetened condensed coconut milk to make them really sticky (see notes for alternatives to these ingredients). The end result is almost too pretty to eat!

What ingredients do I need?

You can see the ingredients with weights in the recipe card as well as my favourite recommended products in the “shop the recipe” section.

To make the strawberry layer:

  • Fresh strawberries: in the summer fresh is best, but to make these all year long, you can use frozen berries. Allow them to defrost first and remove the excess liquid (or use all the liquid and reduce the amount of milk you add).
  • Sweetened condensed coconut milk: this is from Natures Charm and is so sticky and sweet and is perfect for adding a little sweetness. For alternatives, use maple syrup.
  • Evaporated coconut milk: this is thicker and creamier than regular coconut milk as it’s reduced by ½. I also love the Natures Charm tin for this recipe, or use full-fat coconut milk.
  • Thick coconut yoghurt: adds creaminess and gut healthy fermented goodness as well as good fats. I like the Cocos Organic natural or vanilla yoghurt here.
  • Oats: the basic ingredient for overnight oats. Make sure they are gluten-free, where needed.
  • Chia seeds: these thicken the oats as they soak, absorbing all the liquid.

And for the matcha layer, use all of the same ingredients as above as well as:

  • Matcha green tea powder: I use the Meiko ceremonial grade matcha from Matchaeologist (nourishinglove15 for 15% off) or the matcha powder from Blendsmiths which are both amazing. Your matcha should be bright green and super fine.
  • Vegan vanilla protein powder: this makes the layer so creamy and high in protein too. I use a vanilla protein powder but salted caramel would also be fun.
  • Plant-based milk: the top layer gets a lot of the liquid from the berries, so for the green layer, add your favourite dairy-free milk like oat, almond or coconut (from the carton).

To finish:

  • Strawberries: slice these and add to the jars.
  • Whipped coconut cream: I use the Natures Charm whipping cream as it’s so dreamy and soft. You can also use thick coconut yoghurt on top.

Are these gluten-free and nut-free?

These are naturally gluten-free, as long as your oats are gluten-free. These are also nut-free, just check your dairy-free milk and yoghurt for nuts.

How do I make them?

These come together in a few steps:

  • Blend up the strawberries and other wet ingredients: until smooth.
  • Stir in the oats and chia seeds: and leave to sit overnight.
  • Stir together all of the matcha ingredients: and allow to rest overnight.
  • Whip up the coconut cream: for the topping.
  • Add the strawberry oats to the jar: and top with extra berries.
  • Top with the matcha oats: and serve with whipped coconut cream, extra berries and matcha powder.

How long will they last?

Once made, keep these oats for 2-3 days in the fridge covered well.

Ingredients

For the Strawberry Oats:

  • 160g fresh strawberries, stalks removed
  • 2 tbsp Natures Charm Sweetened Condensed Coconut Milk
  • 60ml Natures Charm Evaporated Coconut Milk
  • 30g thick coconut yoghurt
  • 50g oats
  • 1 tbsp chia seeds

For the Matcha Oats:

  • 50g oats
  • 1 tbsp chia seeds
  • 1 heaped tsp matcha green tea powder
  • 40g vegan vanilla protein powder, optional
  • 2 tbsp Natures Charm Sweetened Condensed Coconut Milk
  • 60ml Natures Charm Evaporated Coconut Milk
  • 120ml plant-based milk
  • 60g thick coconut yoghurt

To Serve:

  • 100ml Natures Charm Coconut Whipping Cream
  • 2 strawberries, in thin slices (plus extra on top)
  • Extra matcha powder, sieved

Instructions

  1. For the strawberry layer, add the strawberries, sweetened condensed coconut milk, evaporated coconut milk and coconut yoghurt to a blender and blend until smooth. Pour into a container and stir in the oats and chia seeds. Seal with a lid and store in the fridge overnight.
  2. For the matcha oats, add the oats, chia seeds, matcha powder and protein powder to a bowl and stir to combine. Pour in the sweetened condensed coconut milk, evaporated coconut milk, plant-based milk and coconut yoghurt and stir really well. Seal with a lid and store in the fridge overnight to thicken.
  3. Chill the whipping cream overnight and just before serving, spoon into a bowl and whisk for 2-3 minutes until light and fluffy (I like a standing mixer but a handheld electric mixer works too).
  4. To serve, spoon the strawberry oats into two jars and top with some sliced strawberries. Top with the matcha oats and serve with spoons of the coconut whipped cream. Dust with extra matcha powder and add some extra strawberries.
  5. Enjoy straight away or cover tightly and keep in the fridge for 2-3 days.
