Quick Soak Creamy Overnight Protein Oats (Vegan Gluten-Free)

These Quick Soak Creamy Overnight Protein Oats are thick and oh-so-creamy, made with wholesome, vegan and gluten-free ingredient. They contain a range of grains and seeds and take 5 minutes to prepare.

If you love creamy oats but often forget to soak them overnight to make overnight oats, then this quick version is for you. Actually, I am preferring this quick version right now over the original as the texture is just so creamy and takes 5 minutes to prepare and a short 30-minute soaking time. You can add any toppings to serve as well, I’ve gone for a summery mix of berries which I have been enjoying for the last few weeks, but in the cooler months choose banana, apples and plums for example.

These oats are a new favourite:

What ingredients do I need?

You can see the ingredients with weights in the recipe card and see my favourites and recommended products in the “shop the recipe” section.

For the oat base:

  • Oats: make sure these are gluten-free where needed. These are regular rolled oats.
  • Ground flaxseed: these are great for thickening the mix and adding omegas.
  • Chia seeds: also high in omega fatty acids, these are great for the brain.
  • Buckwheat groats: these add texture to the oats as well as grain diversity.
  • Boiling water: this is the magic ingredient that makes these oats so creamy, while only taking 30 minutes to soak. The boiling water starts to break down the oats, seeds and buckwheat so they are still easy to digest.
  • Coconut yoghurt: to make them creamy add to add fermented goodness. Use a high quality coconut yoghurt like Cocoa Organic.
  • Plant-based milk: I like 100% soya milk which is also high in protein but you can use your favourite dairy-free milk like oat, almond, hazelnut or coconut (from the carton).
  • Vegan protein powder: this thickens the mix, adds some natural sweetness and adds a boost of protein. I love Form protein powders.

And to top these I have gone for banana, berries, hulled hemp seeds, pistachios and extra yoghurt but you can use your favourite fruits and nuts/seeds or granola. I also like a little (vegan) honey or syrup.

Are these gluten-free and nut-free?

These are fully gluten-free as long as you use gluten-free certified oats. To keep these nut-free, change the pistachios for sunflower seeds and make sure that your milk and yoghurt do not contain nuts.

How do I make them?

These oats come together in a few steps:

  • Stir together the oats, seeds and buckwheat: to combine.
  • Pour over the boiling water: and leave for 30 minutes to soak.
  • Stir in the yoghurt, dairy-free milk and protein powder: and stir again until thick.
  • Serve in a bowl: and serve with your favourite toppings.

How long will they last?

Once made, eat these straight away or cover and keep in the fridge to enjoy over the next 1-2 days.

These Quick Soak Creamy Overnight Protein Oats are thick and oh-so-creamy, made with wholesome, vegan and gluten-free ingredient. They contain a range of grains and seeds and take 5 minutes to prepare.

Ingredients

For the Oats:

  • 40g rolled oats
  • 1 tbsp ground flaxseed
  • 1 tbsp chia seeds
  • 1 tbsp buckwheat groats
  • 140ml boiling water
  • 60g thick coconut yoghurt
  • 60-120ml plant-based milk
  • 20g vegan protein powder

Topping Suggestions:

  • 2 tbsp coconut or dairy-free yoghurt
  • Handful of berries
  • ½ banana, sliced
  • 1 tbsp pistachios
  • 1 tbsp hemp seeds
  • 1 tbsp vegan honey or syrup

Instructions

  1. Add the oats, flaxseed, chia seeds and buckwheat groats to a heatproof bowl and stir. Pour over the hot water and stir well. Leave for 30 minutes for the oats to absorb all of the water.
  2. Now add in the yoghurt, 60ml of milk and the protein powder. Stir until thick and creamy, adding more milk as needed.
  3. Pour into a bowl and top with your favourite toppings.
  4. Eat straight away or cover and eat in the next 1-2 days, keeping in the fridge.
