Pumpkin Spice Quick Soak Overnight Oats (Vegan High-Protein)

These Pumpkin Spice Quick Soak Overnight Oats are really creamy, thick and cosy flavoured with classic pumpkin spices, packed with apple and chia seeds. These oats are ready in 30 minutes without soaking overnight.

Welcome back to another version of my favourite quick soak (aka no overnight soaking required) oats and these super festive and autumnal oats. They have lots of cosy pumpkin spices with pumpkin puree and apple grated inside for a boost of fibre and some fruit and vegetable goodness. These oats are ready in 30 minutes and are great for busy mornings when you forget to place your oats in the fridge the night before. They are packed with gut-healthy ingredients and you can make up just one bowl or make a bigger portion to keep you going all week.

What ingredients do I need?

You can see the ingredients with weights in the recipe card below and see my favourites and recommended products in the “shop the recipe” section.

For the DIY pumpkin spice blend:

  • Cinnamon
  • Ground ginger
  • Ground nutmeg
  • Ground clove
  • Mixed spice

As for the oats:

  • Oats: the base of all good porridge/oatmeal recipes. Make sure they are gluten-free, where neded.
  • Ground flaxseed: these are great for digestive and heart health.
  • Chia seeds: great for binding the mix and also for omega fatty acids.
  • Hulled hemp seeds: I love these for adding some goodness.
  • Apple: grate the apple for inside the oats, no need to peel the apple, just remove the core.
  • Boiling water: this is the magic ingredient that turns the oats so creamy as it helps them to quickly turn soft and absorb the liquid.
  • Vegan vanilla protein powder: this makes the oats high in protein and adds a thick, sweet creaminess. I use the Form vanilla protein which has great ingredients.
  • Pumpkin puree: this is so good for making the oats really thick and creamy. Make sure this is 100% pumpkin from the tin (or make your own) as opposed to pumpkin pie filling. If you don’t have any and don’t have time to make your own, use a mashed banana, or extra yoghurt, instead.
  • Thick dairy-free yoghurt: I use the Cocos natural or vanilla yoghurt or NUSH natural yoghurt which are both gut-healthy, thick and creamy.
  • Plant-based milk: any dairy-free milk is great like oat, soya, coconut (from the carton) or almond.

To top:

  • Extra yoghurt and apple: as above. The apple is best cubed on top.
  • Granola or nuts/seeds: I love the Keto Hana granola which is coconut, nuts and seeds or you can use your own homemade granola, or some regular nuts/seeds, chopped up.
  • Maple syrup: to drizzle on top or use (vegan) honey or agave syrup.

Are these gluten-free and nut-free?

This recipe is easily gluten-free as long as your oats (and granola) are gluten-free certified. To make these nut-free, use nut-free granola or just seeds on top. Also check your milk/yoghurt/protein powder for nuts.

How do I make them?

These are quick to make in a few steps:

  • Make the pumpkin spice blend: by stirring together all the ingredients.
  • Mix the oats with the seeds and grated apple: and pour over the hot water.
  • Let the oats soak for 30 minutes: and stir.
  • Add in the other ingredients: and stir until creamy.
  • Pour into bowls: and serve with your desired toppings.

How long will they last?

Once made, enjoy the oats straight away, or keep in the fridge in a sealed container for 2-3 days.

These Pumpkin Spice Quick Soak Overnight Oats are really creamy, thick and cosy flavoured with classic pumpkin spices, packed with apple and chia seeds. These oats are ready in 30 minutes without soaking overnight.

Ingredients

Pumpkin Spice Blend:

  • 3 tbsp cinnamon
  • 2 tsp ground ginger
  • 2 tsp ground nutmeg
  • 1 ½ tsp ground clove
  • 1 tsp mixed spice

For the Oats:

  • 80g oats
  • 2 tbsp ground flaxseed
  • 2 tbsp chia seeds
  • 2 tbsp hulled hemp seeds
  • 1 apple, cored and grated
  • 280ml boiling water
  • 40g vegan vanilla protein powder
  • 120g pumpkin puree
  • 120g thick dairy-free yoghurt
  • 200ml plant-based milk
  • 2 tsp pumpkin spice blend

For the Topping:

  • 4 tbsp thick dairy-free yoghurt
  • 1 apple, cored and thinly sliced
  • 4 tbsp granola or chopped nuts/seeds
  • 1 tbsp maple syrup or (vegan) honey

Instructions

  1. Prepare the pumpkin spice blend ahead of time by stirring together all of the ingredients and keep in a sealed container for 1 year at room temperature.
  2. For the oats, add the oats, flaxseed, chia seeds, hulled hemp seeds and grated apple into a bowl. Pour in the water and stir well to combine. Leave to the side for 30 minutes.
  3. When the oats are thick, add the protein powder, pumpkin puree, yoghurt, plant-based milk and pumpkin spice blend. Stir really well until creamy.
  4. Pour into bowls and top with the yoghurt, apple slices, granola and syrup.
    Eat straight away or keep in a sealed container in the fridge for 2-3 days.
