Spooky Chocolate Fudge Crispy Bars (Vegan No-Bake)

These Spooky Chocolate Fudge Crispy Bars are rich and chocolatey, made with simple ingredients and require no baking. They are naturally gluten-free and plant-based and are the perfect spooky season treat.

I just love anything with chocolate fudge and these bars take my love to the next level with a no-bake cookie dough base, a crispy cereal filling and a chocolate layer on top. Decorate these bars as spooky as you like (or save them to make for Christmas, Easter, or any time of year) as you can plan around with the decorations on top. I have gone for a mix of dark and dairy-free white chocolate, some eyes and sprinkles, but you can be as adventurous as you like. There are a few key ingredients to make this fudge next-level, which you can read about below.

What ingredients do I need?

You can see the ingredients with weights in the recipe card below and see my recommended and favourite products in the “shop the recipe” section.

For the cookie dough:

  • Oat flour: blend oats in a blender until they reach a flour-like consistency. Make sure the oats are certified gluten-free, where needed.
  • Almond flour: this adds a lovely moisture and richness to the cookie dough. For a nut-free option, use more oat flour.
  • Maple syrup: for sweet stickiness. You can use agave syrup, too.
  • Coconut oil: to make the dough set.
  • Vanilla extract: for flavour.

As for the main fudge layer:

  • Dark chocolate: use your favourite dark chocolate either a bar, chips or buttons to melt down.
  • Sweetened condensed oat milk: this is the magic ingredient, and I love the Natures Charm one as it’s so thick, sticky and sweet and you can use it like you’d use regular dairy sweetened condensed milk. They also do a coconut one which is amazing.
  • Runny smooth almond butter: make sure it’s runny and smooth for the best texture or you can use peanut or cashew butter, too. To make it nut-free, use sunflower seed butter or tahini.
  • Crispy cereal: you can use any puffed cereal like puffed rice, cornflakes, puffed quinoa or hooped cereal.
  • Salt: for flavour.

And to decorate the tops, you’ll need:

  • Dark chocolate: as above.
  • White chocolate: use a dairy-free white chocolate, which you can find online or in more supermarkets in the free-from aisle.
  • Sprinkles and eyes: or whatever you’d like to add on top. You can also add nuts, seeds, pretzels or other things.

Are these gluten-free and nut-free?

These are naturally gluten-free, as long as your oats are certified gluten-free. To make these nut-free, swap the almond flour for more oat flour, the almond butter for sunflower seed butter and check your other ingredients like chocolate.

How do I make them?

These come together in a few steps:

  • Stir together the ingredients for the base: and press into a tin.
  • Warm together the chocolate and sweetened condensed oat milk: until thick and glossy.
  • Whisk in the almond butter and salt: until thick.
  • Stir in the crispy cereal: and spoon over the base.
  • Press down firmly: and chill in the fridge.
  • Melt the dark and white chocolate separately: in bowls.
  • Slice the crispy bars into slices: using a warmed, sharp knife.
  • Dip, drizzle and decorate the bars: with the chocolate and sprinkles.
  • Allow to set and enjoy: or keep in the fridge.

How long will they last?

These bars will keep for 1 week in the fridge in a sealed container, or 1 month in the freezer, allow them to defrost before eating.

Ingredients

For the Cookie Dough Base:

  • 50g oat flour
  • 50g almond flour
  • 30ml maple syrup
  • 30g (2 tbsp) melted coconut oil
  • 1 tsp vanilla extract

For the Chocolate Fudge:

  • 170g dark chocolate, chopped small
  • 120g Natures Charm Sweetened Condensed Oat Milk
  • 60g runny, smooth almond butter
  • A pinch of salt
  • 35g rice crispy cereal

For the Decoration:

  • 60g dark chocolate, chopped small
  • 60g dairy-free white chocolate, chopped small
  • 2 tsp coconut oil, divided
  • Sprinkles

Instructions

  1. Line a 6-inch/15-cm square tin with parchment paper.
  2. For the base, stir together all of the ingredients to reach a sticky consistency. press into the tin to make a firm, compact base. Transfer to the fridge while you move on.
  3. For the chocolate fudge, add the dark chocolate and condensed oat milk to a heatproof bowl and warm in the microwave or over a pan of simmering water until the chocolate melts to form a sticky mix.
  4. Now, whisk in the almond butter (it may thicken up) and add in the salt and crispy cereal. Fold to combine and then spoon over the base Press down firmly to make an even layer.
  5. Return to the fridge for 1-2 hours, until set firm.
  6. Remove from the fridge and tin and slice into 6 bars.
  7. To one small bowl, add the dark chocolate and 1 tsp coconut oil and to a second bowl, add the white chocolate and 1 tsp coconut oil. Melt both chocolate bowls separately, as above.
  8. Dip the bars in the chocolate and decorate with sprinkles.
  9. Allow to set for 20 minutes in the fridge and enjoy.
  10. Keep leftovers in the fridge in a sealed container for up to 1 week, or in the freezer for 1 month. Allow to defrost before eating.
