I recently shared my delicious recipe for Instant Tofu Noodle Jars, and they were such a big hit that I instantly wanted to try out some new flavour combinations to show you just how amazing these healthier and even more delicious pot noodles are. Inspired by instant noodle packs in the shops, these recipes contain no MSG, are fully plant-based, made with wholefoods and will provide you with a nourishing, balanced and filling meal. The flavour possibilities are endless, but this new gochujang and lime combo is a winner.

Lime and Tofu Noodle JarsInstant Gochujang Lime Tofu Noodle Jars
What ingredients do I need?
You can see the ingredients with weights in the recipe card and see my favourite and recommended products and brands in the “shop the recipe” section.
For the sauce:
Gochujang chilli paste: this is spicy and adds all the heat, so add more or less depending how spicy you like it.
Sesame oil: this adds “nuttiness” without the nuts and adds richness.
Tamari soy sauce: or regular soya sauce (tamari is GF). Make sure you use one with simple ingredients.
Maple syrup: to balance out the sharper flavours. You can also use agave syrup or (vegan honey) or coconut sugar.
Lime: for freshness and tang.
Vegetable stock cube: instead of MSG, this adds the salty flavour.

Ingredients
For the Sauce:
1 tsp - 1 tbsp gochujang paste (depending how spicy you like it)
2 tbsp sesame oil
2 tbsp tamari soy sauce
1 tbsp maple or agave syrup
1 lime, juiced
½ vegetable stock cube, crushed
2 garlic cloves, crushed
1-inch piece ginger, grated
For the Jars:
2 nests noodles (quick cook)
1 small courgette, cubed
1-2 carrots, ribboned or peeled
2 small bok choy, chopped small
200g smoked tofu, crumbled into cubes
2 spring onions, sliced
1000-12000ml boiling water
Optional extras:
2 tbsp crushed nori
2 tbsp mixed black and white sesame seeds
A few slices fresh chilli
A fresh sprigs fresh coriander
Lime wedges
Instructions
Have two large heat-proof and air-tight jars and ready (750-1000ml capacity).
Start by making the sauce, either in a bowl or make it directly into the two jars, dividing the ingredients equally between both jars. Whisk well to combine.
Chop all of the vegetables into small pieces and use your fingers to crumble the tofu into 1-cm pieces.
With the sauce at the bottom of the jars, layer up with the noodles then the courgette, carrot, bok choy, tofu and spring onion.
If adding any extras, add these on top now. Add the lime on top.
Either seal the jars and place in the fridge for 1-2 days until required or prepare straight away.
Remove the lime. Pour boiling water into the jars, coming right to the top of the tofu. Do not seal the jars as the heat needs to escape slightly, but you can place a lid half on the top of the jars and allow to rest for 5 minutes. Now squeeze over the lime wedge.
Stir well and check the noodles are cooked through and then enjoy.
