Rocket Ginger Smoothie

Who doesn’t love a green smoothie? Well, a lot of people actually. I think they’re put off by the whole ‘greenness’ of it, thinking it will taste like grass. Well, that’s where they are wrong. Because there are plenty of green-loving smoothies out there that celebrate vegetables and tastes rather delightful. I think this is one of them.

This is inspired by a smoothie I had recently at Avobar in London (you can read my full review of this avo-centric restaurant here) which featured avocado, of course, as the main ingredient. I’m not new to adding avocado into my sweet breakfast options as my Chocolate Protein Pudding will prove, but I wanted to create something different. So, still dreaming about my green smoothie in London, I set about upping my green smoothie game.

This smoothie is thick, creamy, sweet, fiery, peppery, vibrant, nourishing and satisfying – it will keep you going!

The main game changer in this smoothie is the rocket. We all love to add spinach or kale to our vibrant drinks but rocket was a new one to me. Thanks to the other delicious flavours, the rocket is really not overpowering, rather it leaves a light peppery note on the palate that means this breakfast option isn’t too sweet. Made creamy by the blend of avocado and banana, this thick Rocket Ginger Smoothie has almond butter for added flavour, texture and protein, some flaxseed for fibre and extra goodness, ginger for a fiery heat and health boosting properties and spinach (because two types of greens simply isn’t enough!) blended with coconut water. This water has a sublte sweet flavour to it and blends really well, although you could use your preferred milk here and it would be just as great.

If you’re still a little wary, then please take it on my recommendation that this may just become your new favourite green smoothie.

Rocket Ginger Smoothie

  • Servings: 1

A deliciously creamy and zingy green smoothie with avocado, banana and almond butter for a morning treat.

Ingredients

  • ½ avocado
  • 1 ripe banana, frozen in chunks
  • 1 tbsp almond butter
  • 150ml coconut water
  • 1 tbsp ground flaxseed
  • 1 handful spinach
  • 1 handful rocket
  • 1-inch piece ginger, peeled and chopped

Directions

  1. Place all the ingredients in a blender and process until smooth and creamy, adding a splash more liquid as desired.
  2. Serve cold with a sprinkle of hemp seeds, if desired.

    Hi Amy. So sorry for saying this I have always been weary of the Green Smoothies, however your smoothie above looks good. Lol do I have to have the spinach and rocket in the smoothie-want alternatives could you recommend to me? Along with what plant milk would work best, I can’t wait to get out my new smoothie maker/juicer which I brought end of last summer! Mine smoothies will be a epic fail for a beginner cook like myself. I can’t wait to try your above recipe, so sorry it’s only now I am catching up with your amazing food blog. I have been super busy with working, studying, and volunteering! Super photography as always, do you use your phone to take pics?
